Turkey and Yam Spicy Tacos

I really loved these tacos! I made a few modifications: I used a 1 lb. of ground turkey, increased the spices, used 3/4 cups of the salsa verde and served it on corn tortillas that I toasted over an open flame. YUM! I also did a version were I skipped the tortillas altogether and served this with regular salsa in addition to the tomatillo salsa over shredded lettuce as a taco salad. That was also excellent!

Smoky Chipotle Hummus

I get raves every time I bring this to a function. It's super-easy to make and it is always a hit. I like to have a batch on hand for snacking on at home. This one will stay in my regular rotation!

Chocolate Crinkles II

These are VERY easy to make and they are FANTASTIC! We call them "Brownie Cookies" becasue they taste like little individually baked brownies! YUMMY!!!

Margie's Cuban Sofrito (Sauce)

Sorry, this NOT Sofrito. I don't know where this recipe came from, but it's missing Cilantro, Culantro and fresh tomato. Also, it has OIL? It's not supposed to be cooked. this make make some tasty type of sauce, but this is NOT Sofrito. Sofrito is a few basic, FRESH ingredients processed until smooth in a food processor. People, enjoy this as a sauce, but if you think this is authentic Sofrito, either Cuban OR Puerto Rican, you are mistaken.

Parmesan Broccoli Balls

This was my first time trying these, and I'll be making them again for sure, but I'm going to experiment a bit. This time out, I subbed the parmesan for sharp cheddar, which was yummy. My only concern is that they were to "egg-y" Next time, less egg adn butter. I'll also be sauteeing the onion and experimenting with adding various seasonings and possibly, sauteed mushroom. The flavor was OK, it just seemed to be missing something. I think these are a great nibbler, I just want to tweak them to be a bit more flavorful.

Crab Cakes III

Great crabcakes whether made with saltines or Ritz. I make them with a home-made remoulade sauce and they are OUTSTANDING. I'm not willing to try the sauce included with teh recipe, I can tell it has too much oil for my taste. With remoulade the crabcakes are awesome alone or over fettucini pasta. Enjoy!

Au Gratin Potatoes II

I made this dish for my fiance and parents and they LOVED it, there were no leftovers! It's extremely easy to make, and tastes like you fussed. I used frozen, shredded hash brown potatoes instead of doing the shredding myself. I will be making this again soon. Just be sure you put it in a deep enough pan, so it doesn't bubble over. I learned that one the hard way!! :)

Blue Ribbon Overnight Rolls

I made these rolls last year for my first holiday with the future in-laws. They were a BIG success, not one left! Very easy to make, and delicious! I brushed mine with melted butter and a sprinkle of garlic powder on top while baking for a little extra flavor.
