Oat Bran Muffins

I added ground flax seed, cinnamon, nutmeg, allspice and a crumb topping (2 tbsp butter, 1/2 c oats, 1/2 c brown sugar, 1/4 c flour, 1/4 c chopped walnuts) and these were delicious! I do think next time I will use more applesauce as other reviewers have suggested, as they were just a little bit dry. And I think these would be yummy with chopped dates... will be giving that a try! Great healthy recipe!

Intensely Chocolate Mousse Cake

Wow, this is good. I made it "fancier" for a special occasion with a chocolate graham cracker crust, chocolate ganache on top (EASY recipe on this site!), and raspberry sauce. I also had no springform pan so I baked it in a deep dish pie pan. It's not as much "mousse" as I expected... much richer than mousse, sort of halfway to a cheesecake. Sooo good though. If you try it with the crust/ganache/raspberries like I did, it would be good with white chocolate.

Mexican Whole Wheat Flour Tortillas

These taste great and are SO easy to make. I was afraid rolling them out would be troublesome, but they didn't stick or break at all, even when transferring to the frying pan.

Chocolate Chocolate Chip Cake Cookies

These are awesome! The only change I made was to use half brown sugar and half white. The only reason I gave this four stars instead of five is that the chocolate was a little TOO overwhelming as written... I guess I'm just not a true chocoholic, lol! Next time I'm going to try half white chocolate chips and half regular (and there WILL be a next time!)

North Carolina-Style Pulled Pork

This recipe is absolutely INCREDIBLE. Since it's the middle of winter, I made it in the crockpot instead of the grill... so I added a little liquid smoke. I also used some extra brown sugar, but I think it would have been fine with the original recipe amount. This is an awesome recipe if you like NC-style pulled pork... we served it with cole slaw on potato rolls, and made total pigs of ourselves two days in a row =) It's just like the BBQ we love on the Outer Banks!

Baked Oatmeal II

This recipe is awesome! I would say this is more like 6 servings, but it's so delicious two people can finish it off in one sitting! =) I did make a few changes to make it a little lighter (taking into account said overeating)... I only used 3/4 c. brown sugar, and instead of 1/2 c. butter, I used 1/4 c. butter and 3/4 c. unsweetened applesauce. I've added a diced apple too (instead of the cranberries), and that makes it soooo good, like a cross between oatmeal and apple crisp.

Easy Fruit Cobbler

This is awesome, SO easy and SOOO good!! I used a can of lite cherry pie filling instead of the peaches, and just added a little vanilla, cinnamon, and nutmeg to the batter for extra flavor. GREAT idea for an easy, really tasty dessert.

Pumpkin Gingerbread

Really, really, really good!! As some previous reviewers suggested, I substituted milk for the water, and added nutmeg. I also wanted to make it more "gingerbread", less "pumpkin", so instead of 3 c. of white sugar, I used 2 c. of white, 3/4 c. of brown, and 1/2 c. of molasses. It was just a little sweet, so next time, I think I'd cut the brown sugar to 1/2 c. But it disappeared FAST, this is an instant favorite for me!

Cranberry Nut Bread I

This bread is incredible! I did make a few changes: omitted nuts (allergies); added extra cranberries, halved; used 3 tbsp of oil instead of 2, since some reviews said it was dry; and added a glaze of confectioner's sugar and orange juice. Came out moist and DELICIOUS! I might try reducing the orange zest just a little and adding vanilla next time, since I like it just a LITTLE sweeter/less tart, but overall it was wonderful. This is now my go-to recipe for cranberry orange bread!

Perfect Baked Jerk Chicken

Very good, although I reduced the salt to 1 tsp and baked at 375 (rushed) and it still tasted great. Next time, I think I'll try putting the rub directly on the meat (under the skin) and see how that goes... I don't like eating the skin.
