I am a stay at home mom with 2 little girls, 5 and almost 2. They keep me busy, but I also enjoy working with my FRG and I am going to school online. I cook as much as possible. I like to keep our meals healthy and balanced.
My favorite things to cook
If I liked doing dishes I would cook every meal from scratch. Usually I just cook dinners and breakfasts. I love to bake because I have a sweet tooth. My husband is often wary of new things so I stick to what I know he will like and ingredients he is familar with.
My favorite family cooking traditions
making enchiliadas with my mother (now that we are so far from our family my hubby helps) rumballs have been a christmas tradition for 4 generations, now passed to my in-laws too
My cooking triumphs
my husband "hated" pork chops until I made one of rachael ray's recipes now he asks for them all the time, being told my enchiladas were better than a restaurant's, the adorable polar bear cupcakes I made for my daughter's pre-k class
My cooking tragedies
the first time I made meatloaf on my own, oh man, it was greasy and mushy so horrible we went to mcdonalds

Amish Casserole
As is I didn't think that the recipe was nutritious enough so I followed the advice of another review and added onions, tomato, grated carrot, garlic, bell peppers, wheat germ(that was me)and low sodium soup to the meat mixture. Instead of cream of chicken soup I used sour cream and a chicken bouillion cube and parmesan cheese on the noodles. I also used cheddar cheese instead of american and left out the brown sugar. I decreased the amount of the ingredients because it made way too much. My whole family loves this version. It is now one of my go to meals.

Halibut with Zesty Peach Salsa
I made this using mahi mahi. I baked it with the extra marinade and then poured the cooked juiced over rice and my fish before topping it off with the salsa. I loved the flavor. I will definitely make this again.
