Truck-Stop Buttermilk Pancakes

Really like these, but still can't seem to find pancakes as good as ihop. Not even the ihop copycat recipe is as good as ihop. But these were definitely yummy. Some of the best I've made at home. One tip, rather than stirring in blueberries, chocolate chips, whatever, pour the pancake batter on the pan, sprinkle with the berries, etc., then flip as usual. No blue pancakes, and perfect distribution of goodies!

Funnel Cakes V

Well, I've been searching for a perfect funnel cake recipe, and took me a while to get around to trying this one because it only had 4 stars, but this is the BEST funnel cake I've ever made! I used a clean, empty, pancake syrup bottle to squeeze out the funnel cakes easily into the oil. Saw them use that at Knott's Berry Farm actually. Topped with powdered sugar, strawberries (mixed with white sugar), and whipped cream. AMAZING! I'll never be able to spend money on them at theme parks and fairs again!

Potato Bread II

Oh my this was good! I made it in my kitchenaid and shaped it into rolls. Super light and fluffy and delicious. I think this will be my new favorite bread recipe. I had bought instant mashed potatoes and my family hated them, so I wanted to use them some other way. This was perfect! Looks like I'll be buying instant potatoes again after all! I did have to add a little more water to get the right consistency. May just add a little less flour next time. This is always different for everyone in bread making, depending on the humidity, flour used, etc., and so I don't find this to be a fault of the recipe. Also, those who scored it lower because it didn't "keep" long... any homemade bread won't keep as long as storebought which has all the chemical preservatives, but it never lasts long enough in my house to know!

Sweet Dinner Rolls

I use my kitchenaid mixer to knead this rather than my bread machine, but these rolls are a huge hit with anyone who eats them. They're no fail UNLESS you overcook them. They can go pretty quickly from soft, moist, fluffy and amazing to just alright. So just make sure you take them out as soon as they're golden.

Texas Caviar with Avocado

When I went to store on New Year's Day they were out of canned black eyed peas, so I used a 16 oz. bag of frozen peas instead. I put them in a pot of salted water, brought them to a boil, and then reduced to a simmer and simmered for 30 minutes. Then I drained them, and added everything but the avocado. I also added cilantro and green onion. I was also afraid that I couldn't chop the jalapeno fine enough and I wanted the heat and flavor without anyone getting a chunk of jalapeno, so I blended the chopped jalapeno with the cup of salad dressing, and it also seemed to thicken the salad dressing a little, and reduce the "soupiness" others talked about.

Best Bread Machine Bread

I bake bread by hand several times a week, and maybe I'm a "bread snob", or maybe my bread machine isn't very good, but I didn't like the texture or flavor of this bread. Granted, it rose well, but that is the minimum requirement for a loaf of bread. Won't be making it again.

Apple Dip

I've been making this dip since I got the recipe from "Watkins" about 14 years ago. The only difference is they have you add their caramel flavor in addition to the vanilla. Delicious!

Mushroom Broccoli Medley

I made this as a side dish to prime rib, along with garlic smashed red potatoes, and it was perfect! My family loves sauteed mushrooms on top of their steak anyway, and so this made a great pairing with red meat.

Charlotte's Tortellini Soup

Old Lady Cleveland's Gooey Bars

I rated this in the middle, but after my revisions, it would be 5 *'s. Use only 1 cup confectioner's sugar, use butter instead of margarine, add a second stick of melted butter to the lemon mixture, and top with 3 ounces sliced almonds.

Southwestern Style Chalupas

I gave it stars, though this is after my own changes... The beans didn't cook for me in the slow cooker the first time even after 9 hours. Next time, I soaked the beans overnight first, then cooked for 8 hours on high in the slow cooker with the pork, and I added a lot more of the spices, plus garlic, and 2 cans of Mexican style stewed tomatoes. Over corn chips with all the toppings was good, but it's also a great basic mexican filling for burritos, tacos, anything.

Cheesecake Supreme

This was the MOST delicious cheesecake. It did take longer to cook than stated. The only thing I did to make it even better, was to add vanilla extract, and I substituted the crust from the "Basic Cheesecake" recipe on this website. Truly fabulous.
