Cranberry Pistachio Biscotti
I have been making this during the holidays to add to cookie plates for about 5 years. I have never made this with pistachios, only with pecans (my favorite). It is always good.

Strawberry Bread
I took this to work. People there seemed to like it, but I found it to be too moist and gooey. The flavor was nice, though.

Spinach Enchiladas
I liked this with modifications. I added some fresh spicy peppers, and some garlic salt, onion powder, and black pepper. The husband hated it.
