Enchilada Casserole
I added some veggie "fake ground beef" crumbles because I didn't have tempeh and it was GREAT!

Cream Sauce With Herbs and No Dairy
Great texture and very easy, but lacks the spices to make it really good. Maybe garlic and cayenne pepper?

Portobello Mushroom Stroganoff
Delicious! We tried it with olive oil instead of butter and tofu-based sour cream, and it turned out beautifully. We served it with grilled salmon.
