Good New Orleans Creole Gumbo

Oh boy! This is like heaven in a bowl. THIS is the kind of gumbo I dream of and crave and wait all year to get when we go NOLA. I did not change a thing in this recipe and it turned out absolutely perfect! Thick and rich and full of flavor. The flavors are intense and subtle all at the same time. I made it last night for our church supper tonight and it was better this morning for breakfast than when I made it last night. By dinner tonight it will be over the top!

Curry-Chutney Cheese Mold

This is my go-to recipe for parties, holidays, and just because we want some. However, instead of using bacon bits I ALWAYS fry up bacon, cool it and put it in the food processor to chop it. It tastes 100% better than the bacon bits you buy. I have also found that when you are out of chutney and cannot find it (we live in a small town) you can substitute mango jelly or even apricot preserves. Just add a bit of red pepper (a few dashes) and it balances out the sweet to perfection. Also, I always stir the coconut into to it as well. My aunt is a purist. She rolls it in the coconut, hollows out the middle a little bit and fills that with chutney. Either way this is an OUTSTANDING recipe and people will gobble it up.

Judy's Strawberry Pretzel Salad

Absolutely the hands down favorite at our house. Couple of tips that others have mentioned-- 1. let the jello mixture thicken a little before you put it on top of the cream cheese. It just works better. 2. DO NOT overbake the crust. It WILL harden with a few minutes on the counter. 3. Make an extra one and hide it in the fridge so when this one disappears you can pull it out and have some yourself. Super easy and so tasty.

My Girls Favorite Pancakes

Excellent pancakes!!! I added just a touch extra sugar because we like them a bit sweeter and I was out of syrup. My kids did not even ask for syrup. They gobbled the whole plate down. I did triple the recipe to feed 6 of us and it worked out pretty well. I did find that the batter was EXTREMELY thick and I probably should have added a touch more liquid because I almost had to spread them on the griddle but they were so good.

Fluffy Pancakes

Soft Oatmeal Cookies

These are some of the better oatmeal cookies I have tasted. My ONLY dislike was they were SUPER sweet. I mean, really really sweet. But based on other reviews, I did not want to cut the sugar and mess them up further. So I left the sugar alone. I did not have all purpose flour so I used self rising and omitted the salt and baking soda. They WERE pretty moist, almost too gooey so we had to bake longer than the time given and turned the oven down 25 degrees when we did that to prevent them from burning. They were very rich and yummy though. We did add 1 cup of raisins and they were great.

Boliche (Cuban Pot Roast)

I have been making a version of this all my life. Having grown up in Tampa, it was a staple for Sunday lunches or anytime during the week. The ONLY difference in this reciped and mine is that I use ham steak instead of chorizo. You just chop it up and stuff it in the roast like the chorizo. My grandma could not eat the spice chorizo and there was always leftover ham to use in this. For optimal flavor, marinate overnight. You can do it in three hours if you must but it is even better if you plan ahead and let it sit. WONDERFUL!!!!!

Easy Lemon Bars for Junior Chefs

It was okay. Not at all what I was expecting. My 8 year old made it though so of course it was great to her. It puffed up and ended up being a very dense lemony almost pound cake consistency with a thick lemon pudding middle. I did not know if the insides were supposed to be pudding but it had cooked longer than the specified time and was looking like it might burn on top. Everyone ate it and no one complained but definitely not the lemon bars I was after. Will let my kids make it again because for them, it was very easy and did not need a lot of supervision.

Lemony Quinoa

It was okay but not my personal favorite. Too much like bird seed. My husband really liked it and my 8 year old went back for seconds so I guess it was not all bad. I will try it again maybe without the cumin since I am not a huge fan of that spice. I did saute the onion and celery in a little butter until they were soft because I wanted to soften the onion taste and I hate raw celery. The pine nuts were great!

Ground Beef Wellington

I should have taken the reviews to heart about it being bland. It was okay but the meat had little flavor. Next time I will add some onion soup mix and garlic and then see what else it needs. I made individual Wellingtons using two crescent rolls per person and doubled the sauce. I brushed the tops with egg white before I put them in to bake and they turned out really pretty. All in all , it was pretty good.

Broccoli Casserole III

Wow, this was so good. My kids went crazy for it and told me to make it again tomorrow. I did not have quite enough Velveeta so I grated up about 1/2 cup of Gouda and added that too. Next time I will use more crackers or a smaller dish to have more crust. I also cooked the broccoli a bit in the microwave until it was just thawed and it turned out great.

Mulligatawny Soup I

This was awesome!!! My husband is not a soup/stew fan but he ate three bowls of this and said he would eat it again. The only disappointing part was the apples. They lost all flavor. Next time I will try a different type of apple. But I still will make tihs again because all the flavors married very well and were very satisfying.

World's Best Lasagna

I put the sauce ingredients into my crock pot on low before I went to work and had my stir it throughout the day. Everything just blended so well together and the tastes were perfect. I will definitely make this again. It was even better the next day for lunch.

Funnel Cakes IV

yummmmmmmy!!! I decided to make these before the basketball game and the family loved them so much they kept coming to the kitchen instead of watching the game. I did not change anything in the recipe and I used a batter dispenser that I have for pancakes. They were just sweet enough and perfect! Will definitely be a keeper. Oh and it made lots and lots!

Spicy Peach-Glazed Pork Chops

I really enjoyed this recipe. I only gave it four stars because the sauce was way too thin. That is probably my fault though. I did decrease the amount of wine and it was still thin. But it had a super taste and the kids LOVED it. Even my mom who is super-picky about food loved it.

Green Grape Salad

We tried using Stevia instead of white sugar and it was great! We started with one packet and added just a little at a time until we reached the level of sweetness we wanted. My kids LOVE this recipe. We also used 1/2 green and 1/2 red grapes.

Sarah Contona's Sweet Potato Pie

Not too bad. I left off the marshmallows since I made it the night before our church lunch. Just before I served it I spread some sweetened sour cream on the top. The crust was not my favorite part and I will change that next time to a regular pie crust. Again, I made the filling in my food processor to get a smooth texture. I went to three stores to find light cream but no luck so I used half and half and it turned out really rich. My girls decided though that it was more like Sweet Potato Cheesecake than pie. Was it a hit at church? Well, about 100 people ate and my pie was the first desert gone and I shared the recipe with almost all of the ladies there. So yeah, it was good.

Southern Sweet Potato Pie

This was a pretty good recipe.I did make a few alterations as I went along to suit my family's tastes. I added a Tbsp of Vanilla right off the bat to get rid of the canned sweet potato taste. I slowly added sugar until I got to 1 cup and was happy with the sweetness after the corn syrup went in. I did not have the oily residue on the top that others had so I don't know about that. I also made the filling in my food processor which gave me a silky smooth texture and NO lumps from the canned sweet potatoes. My kids attacked it right out of the oven and it did not last one night. I would make it again and again.
