About this Cook
I'm a mom of two kids under the age of 3 (soon to be 3 under 4!) and I work full-time, so even though I love to cook, I don't have much time. I'm always on the lookout for good, wholesome recipes that don't take long to prepare. When I do have time, I love making involved recipes that take all day but are completely worth it!
My favorite things to cook
I love baking and cooking any sort of comfort food, really. I also like to experiment with new and different flavors, changing up old recipes and making them my own.
My favorite family cooking traditions
My mom used to make cut-out sugar cookies with buttercream icing every Valentine's Day, and I continue that tradition with my own family. I also enjoy my dad's grilling, but I defer to his expertise and stick to bringing dessert.
My cooking triumphs
When I visit my parents, I like to try out new recipes on them. They have liked a lot of my creations, such as chicken pot pies and Italian stuffed chicken.
My cooking tragedies
My brother and I used to make these barely edible mini-cakes in the microwave when we were growing up. What can I say? As much as I like to experiment, I'm bound to have tragedies from time to time. :)

Cola Pork Chops
The sauce was pretty flavorful, although I might have preferred it a little thicker. The pork didn't come out incredibly tender, but I think it may have been the meat itself. I will try the recipe again with fresher pork chops.

Southern Shortcake
Delicious! I altered the quantities to make 4 servings, and it still came out great. My husband and I both loved it. The "shortcake" recipe would also make good biscuits. I would also like to try this with peaches.

Sandy's Casserole
This was simply delicious! I did make some changes because of the ingredients I had on hand. I used penne instead on macaroni, and one can of cream of mushroom soup and one cream of chicken. I used half cheddar and half mozarella cheese. I also left out the mushrooms because my husband doesn't like them. I did not cook the pasta ahead of time, and it came out perfectly cooked. My whole family loved it. The great thing about the recipe is that it is adaptable to what you have in your pantry. I will definitely make it again, and probably try different combinations of pasta, cheese, and soups.
