Oklahoma Cheese Grits

Good grits. Love the creamy texture from the cheese, and the thickness from the eggs. The worcestershire sauce had me worried, but the flavor mellows out in the final product.

My Amish Friend's Caramel Corn

LOVE this!!! Made my own popcorn on the stovetop. Reduced the recipe to 10 servings. Baked in an aluminum pan coated with cooking spray, used a rubber spatula to stir. Much easier than I thought it was going to be. Came out perfectly, but might add the peanuts next time. Yum!

Tasty Collard Greens

Made adjustments to the recipe and the greens still came out tasty. Instead of chicken stock I boiled the smoked turkey in water. Once done, I pulled pieces of the turkey from the bone and added these pieces to the greens cooking in the turkey broth. Seasoned with salt, pepper, seasoned salt, and a tablespoon of sugar at the end. No garlic, no crushed red pepper. Made the night before, and reheated the next day for Thanksgiving dinner. Drained most, but not all of the liquid before serving. Everyone enjoyed. Giving 4 stars because I made several changes.

Too Much Chocolate Cake

I'm giving this a 4 because my husband and I didn't really like it, but my coworkers loved it. I only used half a cup of oil as others suggested and used a smaller box of pudding as I couldn't find a 5.9 oz box. The cake was rich and moist, but too chocolately for me. You definitely need to be a chocolate lover to fully appreciate this cake!

Golden Rum Cake

Delish!!! Resist the urge to eat this until the next day or you will end up with a mouthful of strong rum flavor as my impatient husband did! A couple of tips I followed from someone who has made this cake many times before: 1. mix the nuts with a couple tablespoons of melted butter to help them stick to the cake better. 2. if using a cake mix that has pudding already added, you can use three eggs instead of four. I also followed the technique of applying the glaze by putting the cake back into the pan with glaze on the top and bottom. Cake came out super moist and yummy. Can't wait to make this again!!!

Smooth and Creamy Peanut Butter Pie

Yummy. Very easy to make. Used 1 cup peanut butter, 1 cup powdered sugar, kept other ingredients the same. Still sweet and rich. Store didn't have chocolate crust so used regular graham cracker crust. Drizzled with chocolate syrup.

Crab Cakes III

Delicious! I was nervous to make crab cakes for the first time but this recipe made it so easy. I only made half the recipe, including "half an egg". I used canned special white crabmeat which worked well, crushed saltines in food processor, and eyeballed the seasonings. I baked in the oven at 400 degrees until lightly browned on both sides. Dolloped cakes with red pepper sauce found on this site, which was also wonderful. Served with green salad and cheese grits. Definitely a crowd pleaser!!

Very good. Followed recipe measurements exactly. Made one batch on the stove and one batch in the microwave. No one could tell a difference. I wouldn't mind them being even gooier if that's even a word :-)

Awesome Slow Cooker Pot Roast

I have never successfully made a pot roast until using this recipe. I used a 3 pound top roast, 1 can cream of mushroom, half of the liquid amount (used beef broth instead of water), half pack of the dry onion mix, and added some sliced onion to the pot. Seasoned the meat thoroughly and browned on all sides before added to the slow cooker. Cooked about 7 hours on low. Some parts weren't completely tender, but overall very good and the flavor was wonderful. Served with rice and cabbage. Hubby enjoyed it and called the meal "comforting".

Gourmet Sweet Potato Classic

I made half the recipe using 3 boiled sweet potatoes, but made the full amount of topping. Followed the rest of the recipe exactly. The topping was great! I wish the sweet potato mixture was creamier. Will add more cream/butter next time, but very yummy recipe!

Award Winning Soft Chocolate Chip Cookies

These were very good and soft. I only made half the recipe. I added a tsp of salt and used 1Tbsp of vanilla. Refrigerated dough before cooking about 12 cookies and refrigerated the rest of the dough overnight for more cookies the next day. The second day's cookies were even better than the first. My only complaint is that I think they need more brown sugar/less white for a richer taste. I will try to play with the sugar ratio next time, but will definitely make again.
