Jiffy Jambalaya

This recipe is delish--and great for anyone who participates in Weight Watchers! I cut the oil and used Pam cooking spray instead, added about 1/2 cup each of black/pinto beans to pump up the fiber for lowering points, and what a low-cal meal! Filling, delicious, and low calories!!

Had leftover filet that had been sitting in the fridge and found this recipe to use it up. So glad I did! The sauce is divine-- drinkable, if you ask me! I sauteed some green beans with a little Pam and salt and added them to the mix. Truly amazing! Will be a staple in my weekly rotation! My daughter said it reminds her of a P.F. Chang entree...

Steakhouse Wheat Bread for the Bread Machine

Okay, this recipe is a-ma-zing! I did add a little bit of molasses for flavor/color. Topped the bread with a simple honey butter. Wow!

Sweet and Sour Meatballs II

Loved this recipe, but too much cornstarch-- I cooked the meatballs in the oven at 350 degrees so that they would brown all over and cooked the sauce separately in a skillet with half the cornstarch and it thickened just fine. Added the meatballs and tossed them around a bit (3-5 minutes or so) and laid them atop a bed of brown rice--yummy!!

Banh-Mi Style Vietnamese Baguette

I love vietnamese food, so when I saw this recipe I had to give it a try. It is a keeper! The only change that I would make is the bread. The baguette was too thin to load all of the ingredients properly. I tried it again with a french bread loaf and it was truly amazing. The flavor is very unique and a must try if you like vietnamese food...

Strawberry Cream Freeze: Serve it Your Way!

This recipe is amazing!! I even subbed low-fat ingredients, i.e. soy cream cheese, reduced fat whipped cream, etc. and it still came out fabulous! Served the freeze in waffle bowls for Mother's Day and my friends begged for the recipe!
