Apple Enchilada Dessert

Reviewed: Sep. 30, 2006
My husband made this for Mexican Potluck at work and everyone raved about it. The only bad thing is that it was almost all gone before he got a taste! Only one complaint... that it didn't contain enough cinnamon ~ will add more next time. Thanks for the recipe!

Rum and Raisin Cake

This cake is fabulous! Wonderful flavour, aromatic, and not too sweet! Mmmm. I served it warm with whipping cream poured on top. Wonderful. I ate the last piece a few days later (warmed up in the microwave) and it was even more flavourful! Thanks, Maree for a great recipe!!

Blueberry Cornmeal Muffins

An Added Note: Fresh blueberries can be used instead of frozen if you like. Also, lately I've been adding an extra 1/2 cup of blueberries which just makes them more heavenly! Hope you enjoy my recipe. - Shelley Albeluhn :o)

These muffins were so good that all 18 of them were gobbled up by the three of us in a day and a half! They're fruity, spicy - delicious! Next time I'll add even more cranberry and fig! - Can hardly wait!! :o) Thanks, Jack, for such a wonderful recipe! Deeelicious!!

Health Balls I

Thanks, Thea, for such a great recipe! I've made these a few times and our family and friends think they are REALLY REALLY GOOD! This recipe is a versatile one - I made a few small changes to suit my own taste: In place of 3 Tabls of the honey I added 3 Tabls Black Strap Molasses, I left out the chocolate chips, and used pecans instead of walnuts. Delicious!

BLT Salad

Reviewed: Jul. 9, 2000
I made half the recipe for my husband and me as a main dish. It was just the right amount and it was DELICIOUS! I added grated aged cheddar as well. The dressing was suprisingly REALLY TASTY - perfect for this salad! (The salt in the dressing wasn't necessary due to the bacon and cheese.) Thanks a bunch! :o)

Bacon Cheddar Chive Muffins

Reviewed: Mar. 23, 2000
All it takes to turn a recipe into a lower- fat version is to substitute some of the oil for another wet ingredient. In this case you could substitute some (1/8 - 1/4 cup) of the oil for the same amount of milk or soup. If you want a lower-fat muffin give it a try. :o) - From the creator of this recipe, Shelley Albeluhn.
