Peanut Butter Cake II
I just made cupcakes with this recipe. I read all of the reviews first. I beat 3/4 cup organic Kirkland brand peanut butter with 1 stick unsalted butter. I then beat in the 4 eggs one at a time. I then added the yellow cake mix alternating with 3/4 cup of water. I beat this mixture until it was light and fluffy. The mixture was sticky and a tad difficult to get into the paper cupcakes which I filled 3/4 full. I started out at 20 minutes and they were far from done. I checked every couple of minutes and ended up with approx 29 minutes. I tested with the old toothpick. I just ate one - hmmmm - I am going to top with purchased milk choc icing.
