Nutella ™ Cheesecake

I took the suggestions of some of the reviewers - add an egg, bake at 350 for 30 minutes, refrigerate overnight. It was good, but not great. I've had amazingly good, simple, and creative desserts with Nutella, but I can't say this was one of them.

Oatmeal Pancakes II

Fantastic pancakes. Made them first without buttermilk (before I knew the vinegar/milk trick), and they were merely good. Second time, with buttermilk, they were great. Buttermilk is the key.

Acapulco Margarita Grouper

Great! Great! Great! I actually made a big substitution, though - I used swai instead of grouper. The fish guy at the supermarket had no idea what grouper was, so couldn't recommend an alternative. Swai was on sale, so I took a chance! My wife couldn't stop talking about how good the dinner was.

Banana Bread IV

It was my first banana bread, and everyone has liked it! Good recipe as-is, if a little sweet. (Maybe it's because I couldn't believe I was measuring out 2 1/2 cups of sugar for it!) I also added a cup of chopped pecans for texture.

Quick Eggplant Parmesan

My whole family ate it up! My only suggestion would be to halve the amount of breadcrumbs (and possibly reduce the mozzarella) you use - I ended up dumping a whole lot of breadcrumbs out after I made this.
