Creamy Hot Cocoa

Reviewed: Dec. 27, 2009
OMG - this is the best cocoa!!! I made it as the recipe stated and it was overly sweet for my taste. Then made it per the reviewers suggestions and it was much, much better! Definitely decrease the sugar to 1/2 cup; your blood sugar levels will thank you!!! Increased the vanilla to 1 teaspoon and a note of caution - don't use the cheap vanilla as you can taste the difference between good vanilla and the inexpensive type sold in the supermarket. You'll be glad you did... Thanks Jeanie for submitting this great recipe! Definitely a keeper!!!

Ooey Gooey Breakfast Rolls

Reviewed: Dec. 27, 2009
These are the best and SO simple to make as the recipe is written! But for my family's personal preference, I increased the brown sugar and butter to 3/4 cup each, added a teaspoon of vanilla, increased the butterscotch to 1 1/2 packages as my family likes more of the carmelized syrup. I also sprinkle the cinnamon in the bottom of the bundt pan, then the pecans, rolls, butterscotch and lastly the sugar and butter mixture and another sprinkle of cinnamon. Just to experiment, I rolled each "ball" in the butterscotch mixture and it didn't seem to make a difference after it was finished baking versus pouring it over the top as the recipe is written. Let it sit overnight in the oven, set the timebake and walla it's ready to go the next morning. What could be better than waking up to the smell of these rolls! Thanks so much Jen for submitting this recipe! This is definitely a keeper!!!

Yummy Honey Chicken Kabobs

Reviewed: Nov. 23, 2009
Have tried this recipe 3 - 4 times over the past yearwith different cuts of chicken, etc. The absolute best way is to buy chicken thighs (bone in) and marinate for a minimum of 24 - 30 hours. I make batches of them and put 10-12 pieces in the fridge at a time. My family uses them as "grab and go's". Wonderful recipe!!!

Orange, Walnut, Gorgonzola and Mixed Greens Salad with Fresh Citrus Vinaigrette

Reviewed: Nov. 23, 2009
Light, refreshing and perfect for a summer salad.... The citrus vinaigrette was a nice touch - will definitely make again. Update - made this the 2nd time and used walnut oil in place of the vegetable oil. Using the walnut oil made all the difference, moved this salad from wonderful to outstanding!!!

Darra's Famous Tuna Waldorf Salad Sandwich Filling

The unusual combination of ingredients threw me off when reading through the list, but they absolutely worked together beautifully! I added cranraisins the second time I made this and it was a nice addition. Either way this is a new twist on a classic sandwich. Thanks Darra!

Tomato Chicken Parmesan

Reviewed: Nov. 11, 2009
OMG! This was fabulous!!! Only made a few changes out of necessity as I didn't have all the ingredients on hand.... Added extra onion and garlic powder, dried oregano and sweet basil to the bread crumbs as I didn't have the seasoned variety on hand. Tip from other reviewers: Let the coated chicken sit in the fridge for 20 minutes prior to preparation so that the breading will stick better. Didn't have Monterey Jack cheese so I subbed smoked mozzarella which sent it over the top!!!! Used Bertolli's tomato and basil sauce and mixed the remainder of the sauce with cooked egg noodles and then layed the egg noodles on the bottom of the baking dish. Put the chicken on top and then cooked for 15 minutes. Per other reviews, added the cheese the last 5 to 7 minutes to melt and brown. This was unbelievabley good and definitely going into my rotation. You absolutely have to try this! Thanks so much for this wonderful recipe!!!!

Decided to try "homemade" chili and glad I choose this recipe.... Absolutely delicious! Didn't have regular chili powder, so I subbed New Mexico red chili powder - don't know if it made a difference, but it turned out fabulous. Thanks George!!!

Apple-Raisin French Toast Casserole

Reviewed: Oct. 4, 2009
Okay folks - have made this twice, 1st time as the original recipe called for and the 2nd time, took into account all the reviews.... Used 1/2 cinnamon raisin bread and half french bread, added nutmeg, increased the eggs to 8 and the cooking time to 1 hour with the last 25 minutes uncovered! Same amount of cinnamon... Fed eight hungry BIG men who sang my praises. This is definitely a keeper!!!

Spiced Pot Roast

Reviewed: Sep. 26, 2009
This was by far the best pot roast I have EVER made.... Wonderful does not even begin to describe it!!! I was hesitant after reading the ingredients, but they came together beautifully. Helpful hints: Lightly brown the meat on all sides and you MUST use a hot mango/peach chutney. I pureed the raisins and onions that did not cook "down", and added them back to the crock pot. I then took some of the liquid from the pot and added corn starch for thickner. As soon as it started thickening, I added cups of the remaining broth to make the gravy which absolutely enhanced the flavor. I let it bubble for a minute or two, then added a small shake of cinammon to the gravy and continued to let it cook. I have served this separately over noodles and jasmine rice and loved it both ways. I guarantee you will not be disappointed. The aroma alone permeates the whole house..... Wonderful!!!!

Marinated Grilled Shrimp

Reviewed: Jul. 5, 2009
This recipe is AWESOME!!! Made these for a 4th of July party and they literally flew off the table. After reading other reviews, I used the largest shrimp I could find, replaced the tomato sauce with chili sauce, upped the cayenne pepper, marinated them for two hours and then grilled. People were raving about them and calling to each other to come try them. Definitely a success. Thanks so much for this recipe!!!
