OMG this is awesome and soooo easy. i added dill pickles chopped instead sweet relish. i grated the onion so it wasn't as noticeable, and a touch more mayo so it wasnt as dry. unbelievable and it was my first attempt at potato salad im really impressed, can't you tell?

i agree it is dry i did try adding extra olive oil and garlic. it tasted ok but i really can't see anyway to avoid the dryness.

honestly the only thing ive ever made in a crock pot that had a GREAT taste. the only thing i did different was to use all 3 cups of beef broth instead of water. i omitted the salt as suggested because of the beef broth. any way it smelled great and tasted great even the next day. i couldnt slice the meat so it ended up shredded but everybody loved it. i would make this again and again and i live in chicago, easily comparable to portillos!!!
