Slow Cooker Chicken Taco Soup
This has quickly become one of our favorite meals! I will admit, the first time I made it, I left out the onion and tomato sauce (didn't have any) and used chicken broth rather than the beer - we loved it so much that way that we keep making it the same. I used chicken breast tenders and it works wonderfully (don't need the extra step of shredding and continuing to cook for 2 hours - we just shred it in the crockpot right at the end). We use mild chili beans and mild Rotel tomatoes w/chilies and it still has plenty of zip! Yum yum!
