Easy Cherry Tarts

These were very tasty and very cute! I did half with cherry pie filling and half with blueberry, and forgot to add the almond extract... did not miss it a bit! I did use a 2 inch cookie cutter and pressed them down into and up the sides of the mini muffin cups... some of them baked up high and spilled all over the tops of the pans and it looked like a horrible mess when I took them out of the oven... but after I removed them from the pan they looked just fine! Everyone was raving over these sweet little treats at the New Years party I took them too!

Butter Rich Spritz Butter Cookies

*sigh* I had a tough time deciding on how many stars to give this recipe... they tasted pretty good, better than most spritz in my opinion and the texture worked WONDERFULLY in my cookie press.... HOWEVER... the dough was so thick it burnt up my stand mixer :( and I have mixed some thick dough in the past.... and they spread in the oven :( another minus in my book... and this recipe does not yield very many cookies... I am thinking a whole pound of butter (double recipe) is an awful lot to use to get as few cookies as I did... so all in all I gave it a 3... I will probably go back to my "Snowflakes" recipe with cream cheese, it works better overall for me!

Apple Enchilada Dessert

OUTSTANDING! And so quick and easy too! Hubby wanted taco salad for dinner, so I decided to look for a "mexican dessert" to top it off.. I came across this one (AGAIN... I have seen it several times, but had never gotten around to making it)... I will tell you, I am not so much a huge apple fan (except for apple dumplings, YUM), but hubby is... so I decided to make it for him... the thing is, with the syrup and all this tastes SO MUCH like an apple dumpling, but with a FRACTION of the work! Only thing I did different, was I went ahead and used the whole stick of margarine (1/2 c instead of 1/3) just because I didn't want to deal with the other small piece left over, lol... and another recipe said to let it sit in the syrup for 30 minutes before baking, so I let mine sit for about 20 minutes or so... oh yeah, and I found the 8x8 pan to be too small, so I ended up using an 11X7 pan and it was the prefect size! Try this with a scoop of vanilla ice cream and you will love it!! Oh... and one other thing.. you really don't have to DO all that other stuff and modify this recipe... it is PERFECT AS IS :) (keep it simple)

Southwestern Chicken and White Bean Soup

Delicious and super easy (the way I did it).... I just threw 3 whole frozen skinless boneless chicken breast halves into the crockpot with all the other ingredients (except I added the beans the last hour so they wouldn't get all mushy) and I substituted a 15 oz can of mexican style diced tomatoes for the salsa... cooked on low for about 10 hours, shredded the chicken, put back in and added the beans and cooked for another hour. WONDERFUL!

Chicken Breasts Pierre

AWESOME recipe! I will make this often! Only thing I did different was used fire roasted diced tomatoes, because I didn't have stewed tomatoes on hand... so I added an extra TBSP of brown sugar to compensate since stewed tomatoes are normally sweet... and I added a few extra shakes of hot sauce for good measure :) WOW... I loved it! Thanks Nancy for such a great recipe!

Key West Chicken

This recipe is perfect as is! Only thing I did different is I used 3 full sized breasts and pounded them thinner before grilling to help them cook quicker... I only marinated for 30 minutes and it was delicious! I am happy to have found this quick easy grilled chicken recipe!

Chocolate Kahlua® Trifle

Well, I followed the general concept of this but added more "stuff", and it was DELICIOUS! I only used 1/4 cup Kahlua mixed with 1/4 cup of coffee to keep the alcohol to a bare minimum, and instead of cool whip I made home-made sweetened whipped cream, and I used chocolate fudge flavored pudding mix. I also chopped up a giant Hershey Symphony milk chocolate bar with toffee and almond pieces, and added some in each layer along with some caramel and chocolate sauce drizzled around. This will NOT be the last time I make this, oh it was wonderful!

Baked Ham with Sweet Glaze

This was DELICIOUS! I wanted a sweet thick sauce to pour over the meat to transport easier to a carry-in banquet, and this worked great! While baking the ham as directed, I prepared the glaze over low heat in a sauce pan, with a tad of the pineapple and cherry juice stirred in. When the ham was done I cut it into slices/pieces and placed them in a crock pot. I then mixed a little of the ham (water) juices from the baking pan in with the glaze to make it a little thinner. I poured the glaze over the ham slices and added the pineapple chunks and cherries and stirred to mix it all up. I got lots of compliments, and the ham was so moist cooked this way! LOVED IT!

Braised Pork Chops with Orange-Mustard Sauce

This was simple and tasted great! I used 4 Bone-in chops, cause that's what I had, and the sauce was just enough for 4 chops... so I would definitely make more sauce if making 6 chops. I used powdered ginger instead of fresh (what I had) and left out the watercress and orange garnish (did not have on hand). I served this over brown rice with a salad on the side and had the whole thing on the table in less than 30 minutes! Woo Hoo! :)

Sweet Raisin Roll-Ups

4 1/2 stars! This was very good! I used a 16 oz package of Grands Buttermilk biscuits (all I had on hand) and increased the other ingredients by about 1/4 more to compensate.... oh, and I left out the lemon zest because I didn't have it. I was looking for a quick sweet tooth fix, something in the line of quick cinnamon rolls when I came across this recipe and decided to try it... so glad I did! I am sure I will make this one again!

Maple Pumpkin Cheesecake

This was nice for a change and very pretty, but I think overall I would just prefer plain old fashioned pumpkin pie! As someone else said the texture is silkier and kind of like a mousse, and the maple flavoring is a nice touch... At a potluck with about 60 people present I heard one person comment "this is truly DIFFERENT than plain pumpkin pie!", and there WERE some leftovers... but the pumpkin pie there was gone... LOL

White Chocolate Blueberry Cheesecake

This was very very very good, and I got rave reviews at the potluck I took it too. I used canned blueberry pie filling for the topping, because I had it on hand and actually was looking for a recipe to use it in when I found this one... It is a little time consuming, and truthfully there are other similar recipes on this site that you get *almost* as good results, so I'm not sure how often I will take the extra time to make it, but it will stay in my books as one of my all time best creations! :)

Cajun Cake

This cake was WONDERFUL! I followed the recipe exactly except I poked holes with a bamboo skewer all over the cake before spreading the sauce on. It needs NO modifications, it is wonderful as is, and I can't BELIEVE how easy it was to mix it all up in one bowl, then make up the sauce so easy in just one pan! A winner!

Sassy Sausage and Black Bean Soup

Hubby made this for a chili-cook off at our church and called it "Cajun Chili" He left out the cilantro, used smoked sausage and added quite a bit of Tony Chacheres creole seasoning and generic 'cajun spice'... It was very good and won 3rd place :)

Cartoon Cake

This was OUTSTANDING! I made it in a heart pan for a Valentines Day banquet... I used a whole can of reg (not lite) cherry pie filling drizzled over the top and down the sides and in the center of the heart and it was as beautiful as it was delicious! So easy too... I highly recommend this one!

New Orleans Corn Bisque with Smoked Sausage

Very good, except one thing... how you gonna use "New Orleans" in the title without some cajun kick? I deleted the salt and subbed in a few hearty shakes of Tony Chachere's creole seasoning and a few shakes of cajun spice... I sauteed the sliced sausage along with the onions, and I used canned potatoes for ease. This came together so quickly and tasted so great that I am sure I will make this many many times! Oh yeah, and you can skip totally skip the cheddar cheese on top... I tried it both ways and it was just as good without it!

Venison and Barbequed Bean Bake

This was very good! The only thing I did different was that I was running low on green pepper and subbed in some yellow and orange pepper instead, and I used venison stew chunks cooked on high for about 5 hours. Grandsons liked this, and it is a little on the sweet side, so I recommend serving with something like corn bread and cole slaw... it's just a little rich on it's own. I'm sure I will make this again, and it makes a LOT!

Best Tuna Casserole

This was pretty good, not too difficult or time consuming and made quite a bit... Served with large biscuits and fed 5 people with leftovers at a reasonable price! I added about 1 cup of sour cream, a little adobo seasoning and stirred in some french fried onion with the noodle mixture. Then on top I used cruched up white cheddar Pringles mixed with some more crunched up french fried onions, and the topping was the best part... next time I will double it! YUM. Will surely make again!

Easy Chocolate Chip Cookies

SO quick and easy and GOOD! My oldest grandson ALWAYS wants my choc chip cookies when they stay overnight, or he feels deprived! The other night it was late, and I was tired and turned to this recipe hoping for a quick fix. He was so upset as they were baking, and he could smell the cake-y scent, cause he KNEW they just weren't going to be as good... but one bite and we ALL smiled REAL BIG! Man, if these aren't as good as my regular recipe they might even be better!
