Cranberry Hootycreeks

Did not make these in a jar, made them as cookies (recipe times 8 for over 200 cookies for an exchange) My gosh they are addictive! So pretty too! They are WONDERFUL!

Yummy Sweet Potato Casserole

Hey folks, I make this with CANNED sweet potatoes and get rave reviews!! One large can (40 oz I think) is just over 4 cups (I use the whole can), but the trick is to boil them in the syrup for awhile to get them kinda mushy, then drain and mash them in a bowl... I use evaporated milk and add some pumpkin pie spice! Absolutley outstanding, and I hope this makes it a little easier for someone! ;)

Vanilla Wafer Cake II

This was pretty good. I made an almond/cream cheese glaze to pour over and sprinkled chopped pecans on top. I used cake release in my 'non-stick' pan, and it STILL stuck (luckily I was able to salvage by pressing the top back on and covering with the glaze)! Make sure you use LOTS of grease and flour in pan, or just make in a 13x9 pan and leave it in there! :)

Cherry Ham Glaze

I made this the way Abianne did in the crockpot. It was very easy and tasty for a carryin dinner, however a little runny (because of the crockpot) I would suggest omitting the water and a little less vinegar, maybe a little more cornh syrup, if you are going to make it in the crockpot. I am sure the consistency would be perfect on a baked ham as recipe states. Very good and worth trying!

Amazing Pork Chops in Cream Sauce

This was pretty good, but I think the chops might come out more tender if you bake them in the oven covered with foil. The cream sauce is fantastic! I made a little extra (used 1 C each wine and 1 C cream/half and half mixture) also thickened with a little flour. Used the extra sauce as gravy for mashed potatoes. I am going to try this again with chicken breast tenderloins!

Ham and Onion Pie

Pretty good dish! I did use ready made pie crust and subbed swiss cheese for the Jarlsberg. I think it's best to let this dish set for about 15 minutes after coming out of the oven for the flavors to meld together (it seemed to me to taste better toward the end of the meal)

Cherry Vanilla Ribbon Pie

This was VERY good! I doubled the recipe and made it in a 13x9x2 dish with excellent results. Instead of a traditional crust I made a shortbread one (1 1/2 C Flour, 1 1/2 sticks of margarine, melted and 1/2 cup finely chopped pecans. Stir together, then press into bottom of dish, bake at 350 for approx 20-25 min until edges start to brown, cool then proceed with recipe) I would highly recommend that you do not be tempted to substitute the real whipped cream with non-dairy topping, as in my opinion that is one key ingredient that made the dessert so wonderful! Try this one, you will not be sorry!

Pumpkin French Toast

This was really good, but as other reviewer stated, not very pumpkin-y. I guess that's good if you are hiding the pumpkin in there for extra vitamins, but not so good if you LOVE pumpkin like we do :) Next time I will try more pumpkin and less egg to see what happens. I used some pumpkin pie spice in place of the cinnamon and nutmeg, and I added a little sugar to the batter to sweeten it up some as grandson does not use syrup.

Cake Mix Cookies V

These were outstanding! I divided the dough into 4ths and stirred choc chips into one batch, raisins and cinnamon in another, butterscotch chips and cinnamon in another, and butterscotch chips, raisins and cinnamon in the last.... one was as good as the other, loved them all! My only complaint with this recipe is the oatmeal gets a little lost in there, next time I may add more and a little more liquid to compensate (another egg maybe or a little water?)

Chicken Fried Chicken

This was good! I used 'Ritz' type crackers instead of saltines (all I had), forgot to add the flour, added extra potato flakes and spices (garlic powder, onion powder, paprika, etc...) and it turned out great!

Simple Ranchy Breaded Fish Fillets

This was quite good. I used it as a base recipe and oven fried walleye filets. I dipped the filets in buttermilk instead of oil and dredged them in the bread crumb/ranch mixture (I added a little grated parmesan cheese too) I am sure I will make this again, and pretty tasty crispy way to make fish!

Grilled Pork Chops with Fresh Nectarine Salsa

4 1/2 stars, hubby agrees! I used peaches instead of nectarines (all I had on hand) and doubled the amount of oil, cumin and chili powder, stirred that all together and marinated the chops for about 4 hours in it. Quite tasty and different! Hubby is not crazy over peaches OR pork chops but admitted he liked both fixed this way!

Paprika Chicken with Mushrooms

Easiest Ever Fruit Cobbler

OH MY GOSH, I would give this 10 stars if I could! I doubled the recipe and baked in a 13X9 pan. I used 4 15 oz cans of peaches in heavy syrup, drained the syrup off of 2 cans but not the other two. Used 2 sticks of real butter melted and mixed in with the peaches, and poured the flour/sugar/milk mixture over all, but poured heavier around the edges as suggested by another reviewer. I was not real clear on the bottom/top oven rack thing, so I actually placed my middle rack in the lowest position, and left the top rack in the highest position. I baked it on the lowest rack for about 20 minutes or so, until it had started to 'set up' and just started to brown a little. Then I took it out and sprinkled some cinnamon and sugar over the top and placed it back in the oven on the top rack. I baked it until it set up pretty good (about another 20-25 minutes) I actually used the toothpick test in the dough (crust) on top and it came out clean (thought it might not because of the nature of the *moist* crust, but it did) Took this to work today and served warm with vanilla ice-cream everyone loved it (even one girl who doesn't even like peaches said SHE liked it!) If you like peach cobbler, PLEASE try this!!! YUMMO and EASY too!!!!!

Pork, Broccoli and Rice Casserole

This was pretty good... I had to leave out the curry (daughter hates it), but, added some shredded cheddar cheese and FF onion rings over the top for the last 10 minutes, and I think that is what MADE the dish. Would love to try with the curry sometime!

Chicken Fettuccini Alfredo

Chicken and Stuffing Casserole

This was so yummy. I didn't have a whole bird on hand, so I use 3 frozen leg quarters and 2 frozen breasts. Placed them in the crockpot on low all day, then de-boned and shredded and prepared as directed from there. So easy and grandsons ate like 4 helpings!!

Taco Casserole

This was very good. I would recommend putting the cheese on top first, then the chips, cause it kind of 'glommed' together and got chewy instead of crunchy. I baked it for 25 min and I still think that was a little too long, I agree with others that 15 min should be plenty (should have read the reviews first) ;) Served with corn as a side and 6 and 8 year old grandsons LOVED this and couldn't get enough!

Cool Whip® Banana Split Pie

I made a low-cal, low fat variation of this "pie" in a 2 qt bowl and it was FANTASTIC! I used one 4 serving size box of sugar free fat free vanilla pudding (made with 2 cups of skim milk), mixed in half of the cool whip (lite) and set aside. I made a layer of vanilla wafers on the bottom and sides as a 'crust', then covered with a thin layer of the pudding mix, then layered as follows: a layer of sliced bananas, more pudding, then sliced strawberries, more pudding, one 8 oz can of crushed pineapple (drained), the rest of the pudding, then topped with the remaining cool whip, drizzed with sugar free chocolate syrup and a cherry on top. I let it set in the fridge for a few hours to soften the cookies. This was SOOOOOO good, I would never have guessed it was reduced calorie, and hubby raved about it! And it really does taste like a banana split, like right when the ice cream is kinda melty... Good stuff and made healthier too, love it!
