Let's see, can you say Jennifer is a challenge when it comes to eating - allergic to Soy, Dairy, Eggs, Nuts, and a whole host of preservatives including Potassium Sorbate, Potassium Lactate, Polysorbates (20, 40, 60, and 80!), Sulfites, Nitrites, Sodium Hexametaphosphate, MSG, plus the pink packets, the yellow packets, and the blue packets. You try to go out to dinner with all that and you'll quickly learn how to cook something more than spaghetti (no Ragu since that has Soybean oil and forget most Italian bread since it has soybean oil and soy lecithin, and oh yeah, no Parmesan or Romano cheeses either).

Cakes. I have my own small business making cakes and breads. Of course, since most of my recipes call for eggs or cream cheese, I can't really taste test much of anything which does keep me from getting fat:)

We host every holiday at our house - Easter, Christmas, Thanksgiving, etc. Never a burnt bird yet.
My cooking tragedies
Not mine but my dad's. He insisted on doing standing rib roast in '07 for Christmas. I told him to do it. He threw it in our oven. Hours later he declared in done. When we cut into it, it was raw. Everything else was, of course, done. So, he had to cut it up and throw it on the grill.

Acorn Squash with Apple
It's like eating Apple Pie without the crust! Absolutely fabulous and easy! We've found that with our microwave that we've had to adjust the cooking time some. We microwave the squash covered for 7.5 minutes on high and then add the apples and cover and cook another 7.5 minutes on high. We cut the apples into wedges that are about 3/8 inches thick. If you cut them too thin you'll end up with applesauce. Our young son was allergic to soy and dairy for a time, so we substituted canola oil and it turns out just as well as when we've followed the recipe with butter. We've also used butternut squash and it's just as awesome. Goes great with a roasted chicken or turkey.

Chicken and Herbs
Excellent flavors. Leaves a pleasant taste on your taste buds. We doubled the recipe and spread the extra herb mixture on some potatoes sliced 1/8-1/4 inch. We spread the potato slices on a cookie sheet and basted them with the herb mixture and baked them with the chicken breasts. Due to food allergies we used aluminum foil instead of non-stick spray, which means makes this dish extremely easy to clean up. Serve the chicken and potatoes with steamed veggies such as green beans or carrots.
