Red Velvet Cake III

I recently made a different red velvet cake recipe from scratch. I was painstakingly careful to follow it to the letter. The cake was heavy, dry and lacked flavor. So, I decided to try this. While I realize it's cutting corners, it came out moist, full of flavor and bright red. I made cupcakes for a holiday family gathering for the kids. Decorated them with green frosting and holiday sprinkles. They rose up beautifully with a nice level cap on top and they are delicious! I will be making these again!!! Thanks to Mary for the great recipe!

Buckeyes I

I make these every Christmas and give to family, neighbors and friends. They are a family tradition. I recommend using a double boiler especially if you are making a large quantity. Melting chocolate in microwave may get you started quicker but the chocolate immediately begins losing heat and will begin to harden very quickly ( before you are done dipping). Peanut butter balls must be frozen and removed from freezer just prior to dipping. I use Crisco butter flavor to thin my chocolate just a bit because it will become thick and scorched after overheating it. I chill a cookie sheet covered in waxed paper in my freezer and place dipped balls onto it and slide them back in the freezer. An hour or so later I remove them and smooth over the toothpick hole. I recommend storing them in the freezer if at all possible. They taste good frozen also. Once you get a rhythm going from freezer to double boiler and back, your production of the candies will pick up. I usually do the initial mixing and such in the kitchen then chill the peanut butter dough... when it comes time to form peanut butter balls.. I take it all to the kitchen table and take in a TV show or to while I'm rolling. Anyone who loves Reeses peanut butter cups will be in awe of these. I personally find them to be even better!! You can also make dough ahead, store in plastic storage bag in refrig. make balls another day and dip still yet another day. Enjoy!

Sweet Potato Casserole I

The topping is fantastic and just makes this casserole. I lessened the sugar IN the sweet potatoes but followed the rest as written. This is very good.

Gingerbread Boy Cookies

My first try at gingerbread cookies and what a wonderful experience! The dough was easy to work with, they all came out beautifully! I will add a bit more ginger and cinnamon next time simply because we like alot of that flavor in our gingerbread cookies. I've spent years buying gingerbread mixes.. no more! This is easy, fun and delicious. Thank you so much for sharing. Can't wait to bake them for the holidays!

Easy Peach Crisp II

I tried this twice as written. I have no idea why but the top didn't crisp up, it was just dry ingredients sitting on the top, and yes I used two sticks of butter. Won't waste the ingredients to try it again.

Quick and Easy Green Chile Chicken Enchilada Casserole

Made this tonight for dinner. I took the advice of another reviewer and mixed the chicken, a packet of taco seasoning and the sour cream and it gave the casserole a bit of spicy zip.. not to much, just right. I didn't use all the enchilada sauce. I used all but about a cup of it. My husband had THREE servings of this! Which he almost never does. This is easy and very tasty, will definetly make this again! Thanks for the recipe.

Soft Oatmeal Cookies

I made these exactly as the recipe is written. They are slightly crispy on the outside and soft on the inside. They have a delcious flavor! This is the recipe I will be using from now on for Oatmeal Cookies!!

Buttermilk Pancakes II

I made these exactly as the recipe is written. I let the wet mixture warm to room temperature. Got griddle hot PRIOR to mixing batter. When I did mix, I didn't OVERMIX. these were fluffy light and very very good!! Will def. make these again!

London Broil for the Slow Cooker

Southwestern Chicken and Rice Casserole

Easy Peach Cobbler

This recipe is delicious, easy to prepare and even my husband complimented it. I plan to show up at the next family gathering with this cobbler. I used canned peaches with 1 cup of the juice and no extra added sugar. It is a keeper!!

Country Breakfast Casserole

I made this the day before, so it was in the refrigerator for almost a full day. It turned out great. I used what cheese I had on hand which was Mozarella. My husband even commented that it turned out good. Will be making this again.

Awesome Slow Cooker Pot Roast

This was just ok. There could be a couple of reasons it was just ok. First of all I used a chuck roast, not tri-tip. Secondly I used fat free cream of mushroom soup because that's what I had on hand. I may try again with regular condensed cream of mushroom. I expected it to be a bit more juicy and tender. May try it once more and make a few changes before I give up on it.

Scalloped Potatoes and Onions

This was probably the best recipe I've ever used for scalloped potatoes. I greatly recommend fresh potatoes which is what this recipe calls for. The only thing I found is that it needed a bit more of the sauce, other than that it was delicious. Next time I may double the sauce portion to pour over the potatoes. I will definetly make this again. Thanks for the great recipe!

Pizza Casserole

This recipe was a bit dry. It had mediocre flavor. I used onion, mushrooms, green pepper, pepperoni, mozarella and even ground beef. I think it needed more pizza sauce. It was just ok, not sure I'd bother making it again.

Cinnamon Swirl Bundt Coffee Cake

Absolutely to die for!! I followed recipe as written with a couple of small changes. I put 1/2 tspn butter in about 5 places along bottom of bundt cake pan prior to pouring batter..AND I made alot of sugar cinnamon mix for the filling ( like tripled it).. this has delicious flavor, texture, aroma.. Absolutely delightful coffee cake. It's a keeper!! and earning instant entry into my family favorites recipe collection book. YUMM!!
