Mediterranean Stuffed Chicken

Had it for dinner last night w/ 6 folks and we all LOVED it! Other than some of the popular suggestions the only change I made was adding sun dried tomatoes to the cheese mixture. Yum!

Amazing! I really recommend using a can of pineapple chucks for the juice. I used the juice in the marinade, then boiled the leftover marinade and added the pineapple chunks for the sauce. Stinkin' amazing!!!
