My favorite things to cook
Sri Lankan, Malaysian, Indian, and Italian foods. And Greek, and uhm...anything else that looks fun, interesting, and challenging. I like cooking good food.
My favorite family cooking traditions
For all pizza dough/calzone products my 2 year old and 4 year old help me proof the dough and beat it down. For meat containing dishes, my wife cooks meat. I clean and cook the majority of meals after enjoying years of my wife's cooking.
My cooking triumphs
People eat my food, even my super picky four year old.
My cooking tragedies
Uh yeah....I've had a few, which are the exceptions to the triumphs.

Absolutely Perfect Palak Paneer
It's a good recipe. It's not 5 star, but is definitely a good dish given the relatively low difficulty of assembling.

Unbelievable Spinach Calzones
Makes too much filling. Egg once mixed with cheeses does not store well in a fridge for any length of time so if using the egg, mix it as a 2nd mixing stage once you know how much filling you're actually going to use. Stock recipe sorta bland, this is one to really get creative on, but is a solid base point for making something that when cooked should look awfully similar to a calzone. Ideas: Dill? Salt? Gouda? Colby-Jack? Meats? buttered garlic? Add just about anything you wanna add into the mix to add an edge to it (The cheeses are mild aka bland) would be my recommendation for other people cooking it.
