This is a hearty, childhood, comfort food. I made no changes and it's likely I never will. My only comment: DON'T BUY OR USE PRE_COOKED SHRIMP. EVER!

Baby Back Ribs

I can't say I made thes as directed because I'm just too picky about my sauces to use anything from a bottle. But I have definitely adopted the method. Before baking I use my own dry rub. After baking I toast them under the broiler for a few minutes, slather on my own sauce, and toast them a second time. Everyone I've made them for can't believe how simple it is considering the results. Thanks for the inspiration!

Crunchy Catfish Nuggets

I've made this more than once now, and I really like it. But my Mrs. isn't a fish fanatic like I am, so to help cut down on the fishiness, I give the catfish a 20-30 minute soak in buttermilk before continuing witth he rest of the recipe. I don't know why, but it does seem to work!

Authentic Louisiana Red Beans and Rice

This is a good recipe that I'll adjust and make again. There's a *LOT* of confusion, but kidney beans and red beans are technically two different animals. Red beans are the smaller of the two, and (IMHO) more flavorful than the common kidney bean.

Baked Teriyaki Chicken

Very, very good. Now one of my Wife's favorites. Ordinarily, I highly disapprove of folks rating a recipe with a dozen or more of their own alterations. A recipe should stand on its own merit. In this case, I made an exception. With the cider vinegar (brown) and the soy sauce (brown), I felt it just naturally called for brown sugar. Not that it make a huge difference, but it adds a subtle richness that I prefer.

Elegantly simple with limitless possibilities, and very tasty. Works well under the broiler, too. Precook the bacon to avoid overcooking the shrimp.

Yummy Honey Chicken Kabobs

Good. Really good. And it doesn't make much of a mess on my grill. Something I'm *always* on the lookout for. ;-) The second time around, I cheated a little using chicken tenderloins wrapped with bacon and broiled. Added some pineapple chunks, too.

Good, but not great. I didn't have any real problems with this, but 21-25 is a medium... not a large. Adjust the mushroom size accordingly. It has a lot of potential. It's just that as-is, it didn't do much for me. It *IS* a great idea though...
