About this Cook
I am a former U.S. Marine and currently the Operations Manager for a construction company. In my spare time I love to exercise, play guitar and cook.
My favorite things to cook
I like trying different things, but if I had to choose favorites, I suppose steaks on the grill would be at the top of the list.
My favorite family cooking traditions
I don't really have any family traditions established yet. As a kid my mother did all the cooking and we did all the eating.
My cooking triumphs
I think the most amazing dish I ever prepared was a salmon, portabllo mushroom phyllo dough roll.
My cooking tragedies
Wow, a lot to choose from for this category. The worst dish by far was my first leg of lamb stuffed with goats cheese and spinach with pine nuts. I first had difficulty butterflying the leg of lamb. Then I couldn't pound it to a consitant thickness, no matter what technique I used. Then I managed to over stuff it and under cook it. Bad, bad, bad, all the way around. I did try this recipe again, however, and it came out better the second time.

Roasted Rack of Lamb
This is THE BEST recipe I have ever used for lamb. The mixture of bread crumbs, oil, garlic etc creates a layer of flavor so rich and complimentary to the lamb that I could hardly believe it. Great recipe, made as is, no changes.

Arrachera (Skirt Steak Taco Filling)
I followed the recipe exact. It was my first time using skirt steak and it came out absolutely delicious. My very first taco night was a success. Thank you!!

J.P.'s Big Daddy Biscuits
Everyone enjoyed these. They were easy to make and were done in no time at all. I covered them in sausage gravy and it came out perfect.
