Marinated Spicy Pork Chops

Really good! I only changed a few things. I used chili powder, fresh garlic, Hungarian paprika, low sodium soy sauce, lime juice, and omitted the sugar. Marinaded overnight and browned in butter. Then, I made a pan sauce reduction with some no-salt beef broth, balsamic vinegar, red wine and raspberry preserves. El Perfecto!

My Crab Cakes

Really awesome! I didn't have any crackers, so I just used some extra breadcrumbs. The only thing I would change is to cut down on the red pepper a little. I also made a creole mayonnaise for dipping. Wonderful!

Spanakopita (Greek Spinach Pie)

If you're going to save leftovers, make sure it is 100% completely cool all the way through before wrapping it up or else it will get soggy in the fridge. Reheat in a toaster oven. This is one of my favorite dishes.

Easy Marinated Pork Tenderloin

First I seared the pork for 2 mins per side in a blistering hot cast iron skillet with a little bacon grease, then finished like the recipe in a covered baking dish. Turned out super moist and tasty!

Sherry Apple Pork Chops

This was really good. The apples were sweet and caramelized and the pork chops where savory and seasoned. I nibbled every last tender bit right off the bone. Super duper!

Grandma's Slow Cooker Vegetarian Chili

Really good! Simmered for an hour instead of slow cooking, and substituted diced tomatoes and chilis for the baked beans. Added red pepper for heat.

Green Chili Stew

Really good! I use this all the time. Kind of a south american alternative to Indian curry. I added red pepper for some more heat and threw in a couple handfulls of Basmati rice during the last 20 minutes to thicken. Yeah!

Seared Sea Scallops

This one turned out really good! Like some others said, I skipped the flour and just tossed in the spices. I also went a little easy on the seasoning salt. Everything seared perfectly with lots of burned-in flavor. Very nice!

Asian Salmon

This is definitely in my top 2 or 3 salmon recipes. I didn't have sesame oil so I used peanut oil instead and topped with a shake of sesame seeds. SUPER!

Simple Grilled Lamb Chops

I'd cut the marinate time down to 1 hour for high quality chops to avoid overpowering the flavor of the meat. Other than that it was SUPER! Probably one of my favorites of all time.

The Best Vegetarian Chili in the World

Awesome! I left out the hot peppers and just added red pepper power until it was at the desired hotness. Added some ground beef and processed it all in a pressure canner according to the time table at the USDA site for chili con carne. Delicious, and in cans it lasts forever. Great over spaghetti or for a camping trip.
