Spinach Brownies
This recipe is great! Since I'm vegetarian, I actually adapted this to a main dish for myself - I used 4 eggs instead of 2, cut the butter down to between 1/4 and 1/3 cup, and substituted feta for mozz. It was delicious! I will try this again per the recipe next time.

Kris' Lentil Sausage Soup
I made this recipe without bay leaves (didn't have any) and with beef kielbasa (we're not pork eaters). I'm not a huge fan of celery, so I left that out as well, even though I think it would have worked well in this. This recipe is fantastic! Next time I'm going to use low-sodium broth because it was a bit salty for my taste, but that was not too big of a problem, clearly, since I had it for dinner and then lunch the next day! GREAT recipe.

Ground Beef Curly Noodle
I really dig this recipe. It's so quick and easy, I honestly don't know why I haven't tried this before. I left out the tomatoes and used a red bell pepper instead. I also added more water and a little soy sauce. I thought the corn was kind of an odd flavor and texture for this - I think it made it taste a little too similar to shepherd's pie the way I make it, so next time I'm going to try snow peas and maybe even some broccoli bits or something like that. This recipe could really go whatever direction you want to take it just by using different meat, seasonings, etc.
