Red Beans and Rice

Made this last night and it turned out pretty good. I added Tony's, cayenne, garlic powder, pepper, thyme, and paprika. I used smoked beef sausage. Husband liked it, and he's picky. Paired with jalapeno cornbread.

Spinach Stuffed Chicken Breast

My husband, who is extremely picky, enjoyed this recipe. After reading reviews, I half-cooked the bacon beforehand, sauteed the spinach and garlic in the grease as well. Added spices recommended from other viewers, but still would have like a little more flavor/kick. I recommend when rolling the chicken, to fold in the sides as well to keep the mixture in the chicken instead of spreading out all over your pan. Good recipe. Not too terribly labor intensive. I paired with garlic mashed potatoes, and a vegetable medley of squash, yel/red/gre bell peppers, and zuchini.
