About this Cook
I'm a working mother and wife with 2 children. I work at our local school district as an administrative assistant for human resources.
My favorite things to cook
I love to cook Italian food which is my daughter's favorite. She's a college student living at home. Even though she's not home a lot, she makes sure to be here when Italian food is on the menu! My son and husband enjoy Mexican food. Fry bread tacos are a favorite for them. I enjoy any type of food and enjoy cooking on the weekends when I have more time to experiment.
My favorite family cooking traditions
I love making Christmas cookies for my extended family. My own crew aren't big sweet eaters, so it's fun to make different bars and cookies to show off my baking side. My mom, twin sister and I used to make cookies together so it's great when my kids bake with me. My daughter has become quite the baker herself and has requests from her co-workers to make cheesecake and Mississippi mud bars for them.
My cooking triumphs
I'd say one of my triumphs was making a ham for Easter Sunday for my husband's side of the family. My brother-in-law doesn't care for ham but says he'd eat mine any day. He proved it by having 3 helpings! Also, any meal is a triumph when everyone practically licks their plates clean and go back for more. It would be nice if that happened all the time!
My cooking tragedies
Yes, I actually mixed up the salt and sugar when I was younger. I'd baked up a small cake for my family and wondered why their faces puckered when they tried it. My mom was so funny. She gently explained what I had done wrong and said she had done it herself so I wouldn't feel too bad.

Tangy Honey Glazed Ham
My family loved this! The glaze is what made it. I followed another reviewer's advice and put the ham in a bag with the glaze. After 2 hours I opened the top of the bag and basted the ham with the glaze every ten minutes for another 1/2 hour. It turned out tender and juicy. The next morning, I had hungry teenaged boys that had slept over and put the ham and glaze in a pan and carmelized the sauce. They ate it all!

Chow Mein Noodle Casserole
My husband says I should definitely make this one again. I agree. I didn't have almonds on hand, so I toasted some sesame seeds. We really liked that flavor. Other than that, I made no changes. I did cook it about 1/2 hour longer, because we like the noodles on top browned and crispy.

Baby Blue Punch
What a hit at my niece's baby shower! She loved the fact that we had used the baby ducks as shown in the picture. The punch really looks like a blue sky with white clouds, and the taste was amazing!
