Scalloped Potatoes and Onions

Reviewed: May 10, 2009
Great recipe! I usually dread the 2 hour wait since I have to plan so far ahead, but this weekend my mother-in-law took the dish and microwaved the potatoes and onions in the casserole dish for 15 minutes after they were layered/prior to pouring the sauce on it. Then we popped it in the oven for 30 minutes and it tasted exactly the same as when we baked it 2 hours. Thanks for the recipe!

Karyn's Cream of Crab Soup

Reviewed: May 10, 2009
Fantastic! I needed something for some leftover crab meat, and this is by far the best crab soup I have ever made at home. I used 1% milk instead of half-and-half but kept the whipping cream and it was still thick and creamy. I also recommend 2 TBSP of Old Bay, or 1 if you are sensitive to spice or salt. THANKS KARYN!

Spanish Rice Original

***vegetarian version*** fantastic even without the bacon, and with the diced green chiles using brown rice - will use every time we make a mexican dish!

Easy Apple Crisp with Honey

Reviewed: Feb. 22, 2009
Quickest apple crisp recipe I have found! Omitted the lemon and water as suggested. I love using honey instead of sugar and corn starch to mix with the apples. This recipe also allows me to use all-natural, organic ingredients without too much hassle - thank you!!!

Spicy Slow Cooker Black Bean Soup

Reviewed: Feb. 22, 2009
I was not thrilled with the slow cooker results...I am a big fan of black bean soup, and this was my first try in the slow cooker. I soaked the beans for almost 24 hours and cooked on high for five hours, then on low for three, the beans are NOT cooked. I gave up and put it in the refrigerator - will have to pull it out later and cook again on the stove so that it is edible. You definitely need to take extra care to ensure your beans get cooked ---- for me, it is not worth the extra time when I can make it on the stove.

Fantastic! Was gone in less than 15 minutes! Used apples, kiwis, strawberries and peaches since I could not find raspberries this time of year. Thanks!

Mexican Lasagna

Reviewed: Feb. 15, 2009
Excellent! We prefer black beans over refried beans as other reviewers suggested, and ground turkey, so I cooked the ground turkey with seasoning (used chili powder and cumin instead of taco mix) and then mixed in the black beans and some corn with the meat and tomatoes (added a chopped fresh jalepeno for spice)as it finished cooking - then layered tortilla-meat-cheese and repeat! It was awesome and there was not one crumb left! Will make again!

Very good and easy to make! A little bland so I added some spice, but overall simple recipe for a great soup.

Apple Butter Pie

my husband loves apple butter, so we had to try this - came out excellent when made with his mother's apple butter (which is very flavorful) and we will be making this again!
