Life at the Cabin
About this Cook
I'm a busy mother of two who would love to cook gourmet again, but rarely has time to crack open more than a can of spaghetti sauce (yes, canned spaghetti sauce) We also own a little cabin on a lake. It's challenging to either cook in an electric skillet, a microwave, grill or fire pit. (No oven at the lake) so I like finding things I can cook while I'm up there. Desserts are the biggest challenge. I once tried to cook brownies in the electric skillet. It took all night.
My favorite things to cook
I really love risotto. Recently I discovered "microwave risotto" on AllRecipes - this has been the best thing that's happened to me, cuisine-wise, in a long time! I like to cook with fresh food and to try new things. Anything I grow in the garden tastes wonderful to me.
My favorite family cooking traditions
In my family, porcupine meatballs and spinach squares are a traditon. I don't tell my aunt that I've lightened both her recipes - she'd hang me for blasphemy!
My cooking triumphs
Every time I cook for my in-laws it's a cooking triumph. They live in Wisconsin and spices consist of salt, pepper, garlic salt and cheese. They love everything I make (or at least say they do) and I love cooking for them because of it.
My cooking tragedies
I belong to a cooking club that has been going strong for more than seven years. We're just a bunch of girls who like to eat and drink together. One time I tried to make low-fat egg nog. It had weird lumps in it and was very runny. It was at that cooking club that we coined the term "That tastes like @ss!" and we use it to describe all our cooking tragedies. I've also flopped saganaki 3 times now. I give up on that one.

Cheese's Baked Macaroni and Cheese
Good stuff! Thanks for the recipe! A couple reviews said it could be cheesier, so I used 12 oz shredded sharp cheddar cheese, but really it was more because I didn't want to store 2 oz of cheese. It was plenty cheesy.

Best Fried Green Tomatoes
Yum! I'd never had fried bream tomatoes and this was wonderful. Reminded me of my grandma's fried zucchini. Thank you for such a nice summer treat of a recipe!
