Delicious Black Bean Burritos
Loved it! Will definitely be a staple in our house. I modified slightly for our taste and what I had on hand.
I did add some leftover taco meat and drizzled with picante sauce. Also increased cream cheese, but next time might add half cream cheese and half sour cream. Diced tomatoes might be a good addition, too.
One other tip, I buy frozen "stir fry" mix (tri colored peppers and onions) and use this in almost all my recipes that use onions and peppers. I hate chopping onion and fresh peppers would spoil before I used them. Way cheaper too!
