Zesty Stuffed Peppers
Very tasty! This was a quick, easy, and healthy lunch. We did follow the original recipe, except to keep this vegetarian, we used Morningstar meat substitute instead of ground beef. We felt it needed just a tad more "zing" for us, so we both splashed on a few dashes of hot sauce on it after cooking and it was perfect. Next time I will add the hot sauce into the meat mixture before stuffing the peppers. Will definitely make this again.

Shrimp and Crab Bisque
This was wonderful! Most definitely will make this again. We did follow the base recipe with only a few minor substitutions. To use what we had in the house instead of running to the store to get ingredients, we used canned crab and evaporated milk instead of half and half. We also used Zatarain's creole seasoning instead of salt and some tricolor peppercorns instead of black pepper. We did not measure the white wine, just splashed in what was leftover from the bottle we were drinking. Overall we loved this: It was hearty and flavorful, and wonderful with hot homemade bread. Perfect for this chilly autumn day.

Roasted Red Pepper and Tomato Soup
This recipe was wonderful. It was a little time consuming but was completely worth it. It was thick and flavorful, and the recipe made enough to freeze some for another meal. I used a little less thyme than the recipe called for, simply because I am not overly fond of thyme, and used smoked paprika. My husband raved over this. Definitely a winner.
