My family requests this almost on a weekly basis. It is a crowd pleaser, especially with the kids. I like to spice it up for the adults by adding several good splashes of hot sauce. We are from out west where there is some very good authentic mexican food and I would say this rates up there.

Rosemary Ranch Chicken Kabobs

Family really loved this and requested I make it a regular meal. I made veggie kabobs to go along with the chicken - with a bit of olive oil, pinch of salt and dash of pepper - onions, button mushrooms, red bellpepper and cherry tomatoes.

San Antonio Taco Salad

Perfect on a busy weeknight and it looked like I had spent a lot of time on it. I followed one reviewers suggestion to bake the tortillas - much less mess, and of course a healthier version.

Ultimate Twice Baked Potatoes

These were very good. I used a kosher salt and olive oil rub on the potatoes before baking and this gave them a nice crunch. I also added a 1/4 tsp of garlic powder to give it just a bit more flavor. Will definately make these again.

The Best Sweet and Sour Meatballs

Family loved these. I cheated and used pre-made frozen meatballs to cut down on time but followed the sauce recipe exactly. It was a success all the way around. The sauce is fabulous!

Baked Apples

Wonderful, with some changes...I peeled the top half of the apple, stuffed the apples with butter and a few raisins. Then I sprinkled each apple generously with cinnamon, brown sugar and chopped walnuts. And for the bottom of the dish I put 2 T water, 1 T pure vanilla extract, and 2 T Dark Rum. Not only were they delicous, but the house smelled heavenly.

Gooey Butter Cookies

Incredibly easy to make. The kids couldn't stop eating them, and neither could I! Chocolate chips are a great addition, or make them plain, either way you can't go wrong with these cookies.

Italian Sausage Soup with Tortellini

So good my son, the picky eater, gobbled up an entire bowl and ask for seconds! I used canned peeled, diced tomatoes. Instead of water I just added more beef broth. Followed everything else to a T! Served it with crusty bread. Will definately make this one again.

Sesame Chicken Strips with Sweet Sauce

This was an easy pleaser for the kids and hubby. I did use prepared mustard. I only had herbed crackers in the pantry so I used those, and it came out terrific. Pleasantly surprised with the mayo/honey dip too.

Pan-Fried Asparagus

My children and I loved this dish. I followed directions to the t and did not have a problem with any of it. I kept my temps low so I wouldn't burn the garlic and it was fabulous!

Golden Rum Cake

IT is hard to impress my mother-in-law - she is an old fashioned do it from scratch lady - this cake left her and the rest of the family asking for more - fantastic recipe!
