Chocolate Chip Pie I

I doubled the recipe and used two deep dish crusts. I used the full amount of butter and everyone loved the pie; no one felt it was over buttered. In fact, I gave one of the pies to my teens; it was devoured. The other was for some colleagues that I had over . They are from Mexico and Peru and loved it. They thought that it was " really American" and took the left over slices back to their hotel. I recommend it as a special treat; it is too rich for every day :-)

Best Big, Fat, Chewy Chocolate Chip Cookie

Really good cookies. Mine didn't get huge or flat. I chilled the dough for about 20 minutes . They taste great! Update- sent some of these to college for my step daughter. I heard from her and a friend of hers that they were the best cookies ever and didn't last a day. Granted, college freshmen will eat anything , I still think that is a pretty rousing endorsement.

Sour Cream Chicken Enchiladas

I used low fat sour cream and lower fat cheese as this was for someone recuperating from heart surgery. It was very well received. Also, easy to freeze and reheat so a good thing to take to someone sick.

Strawberry Pie II

This was really good. I had some cream cheese that I needed to use up so I let it soften, added a little confectioner's sugar and lined the pie crusts with it ( I made two pies so I split it between the two). I then followed the recipe. The only other variation was cooking the strawberry/sugar/corn starch mix for only about 3 minutes. It started to thicken pretty quickly and 10 minutes would have been jam. It was very popular with the whole group.

Lemon-Cranberry Mini Loaves

Ok- A little dry and slightly salty. I made one loaf and the rest I made into muffins. They were good but not freat.

Tantalizingly Tangy Meatloaf

The meatloaf itself had very little flavor ( I used 93% lean beef so that was probably part of the problem). The sauce was ok but kind of reminded me of something that I would have made in a home ec class. It was too sweet and sticky.

Award Winning Chili

Like everyone else (it seems), I modified this a bit. I used a 28 oz can of diced tomatoes with green chiles. I used 2 lbs of ground beef and a 28 oz can of kidney beans. There are no "packets" of chili seasoning in our local stores. So, I used chili powder and red pepper flakes ( we were out of cumin). There was no wine in the house so I used chicken broth. I also used garlic flavored A1 Sauce and doubled the green peppers ( red peppers were 4$ each!). After all of that, I thought it was pretty good. My BF's children thought it was awesome. The 15 year old has a great palate and she actually hugged me and that's pretty rare from a 15 year old girl! Like most chili, it was even better the next day. ******Update- We had an office chili cook off and this won first place so I guess it is award winning chili*******

Easy Focaccia

This was very easy and tasty. You might want to up the salt and herbs though. It needed a little dipping sauce to jazz it up.

Apple Crisp II

I thought this was a little too sweet. I only used 3/4 cup of sugar but it was still too sweet. I would do 1/2 a cup of sugar and double the cinnamon. That being said, everyone else loved it. I am always particularly hard on my own cooking I guess!
