Polenta and Vegetable Casserole
Pretty good. LP says if there was a vegetarian rating it would rate 5 stars. Personally, I wasn't fond of the pre-made polenta. Next time I'll make my own. Thank you for sharing and inspiring.

Homemade Black Bean Veggie Burgers
These were OK, but I've had better. I was handicapped because I didn't have a food processor. I had to hand mince the onion and pepper. I couldn't possibly get them chopped fine enough. LP didn't like them much. I don't think he like the concept.

Spicy Collard Greens
I used 16oz of mixed greens, and turkey bacon. It came out OK, but I'm not big on greens. I'm trying. Mike didn't even touch them.
