Mom's Best Peanut Brittle
delicious! (and easy.) i had never made candy before, and this came out WAY better than i expected. i used all the peanuts, as per the recipe, but i did add a bit of vanilla, as suggested in one of the reviews. this panned out really well for me. so, i made two double batches. the first batch was without the use of a candy thermometer. i tried the cold water test, but i think it will form brittle threads LONG before it reaches 300, so i don't think this is trustworthy. i just trusted my gut, and when the color turned caramel and the consistency thickened up, i figured it was done. it turned out GREAT. my boyfriend came home w a candy thermometer in time for the second batch. i figured i'd be more precise, so i made that batch according to the reading on the candy thermometer. guess what? the first batch actually tasted better! :)

Butternut Squash Soup II
. . . simply delicious! i was amazed at how creamy this soup was, even without the use of any milk! for my rendition, i substituted veggie broth and added some garlic, half of an apple and a dash of ground cloves. wow! really perfect balance of flavours. and so super easy to make. this one is getting added to the recipe box :)

The Best Rolled Sugar Cookies
yum! yum! YUM! these are so delicious, and so SUPER easy to make. we used this recipe for our xmas cookie cut-outs this year, because my mom had forgotten her tried and true recipe (which we've used since i was a kid). well, i have to say....these won her over! not only did she think they tasted better, but she was impressed by the uber simple ingredients. we are official cookie converts to this buttery-good recipe!
