Cake Mix Muffins

I did TBSP, not tsp, in topping's flour & butter. And, I added 3/4 cup chopped nuts for more texture/crunch, I used banana cake mix, and I finely "shredded" cold butter into the topping: worked great. Perfectly done @ 22 minutes in my oven. I prefer the crumb when made by scratch, but this is a great recipe still, to use up cake mix when you don't want to make a cupcake, cake-like texture.

Parmesan Baked Potatoes

I expected a salty bite of fluffy potato with this recipe. I was surprised that the saltiness did not permeat the potato, at all. So, the result was a very nice fluffy potato with a crispy *slightly* salty (yes only slightly...surprisingly)crust. The reviewer who accidently cut into smaller pieces, actually did what I would do, to improve this recipe. It really was too plain with the parm & butter only on the outside. But... I really appreciate the recipe. My creativity is sparked with all that could be done, easily, to take these up a notch.

Cheddar Bay Biscuits

These were pretty good, but, I will look for a by- scratch recipe instead of using baking mix. I wasn't crazy about the baking mix texture & flavor.

Sam's Famous Carrot Cake

I didn't have buttermilk, so I did the vinegar-in-regular-milk thing and it still was an excellent flavored carrot cake. Be warned that it creates a lot of dirty dishes to make this. And, the carrots actually stained my food processor and spatulas. But, I totally forgot about that, after the first bite of this sweet & perfect cake.

Romanian Apple Cake

Good flavor and we enjoyed the first day. But it was very moist, and by the second day it was downright too wet to eat, even though I only covered loosely with plastic wrap. I don't think i will make again, unless we use it up the same day.

Oatmeal Carmelitas

I made with the exact ingredients from the recipe. But used only 1/2 c butter instead of the 3/4 cup called for. They came out fine:not too crumbly These are, by far, one of my favorites bars, after making them. I only had an 8 x 8 pan, so mine were a little thicker, which was even better, in my opinon. I really enjoyed the chewy oatmeal part with the soft chocolate center, and the crunch from the nuts. I didn't use parchment or foil like some did (in their pictures) and other than sticking a little on the very edge, I had no trouble getting them out of the pan. But I did let them set up overnight before cutting. Thank you, for submitting this outstanding sweet treat recipe!

Caramel Frosting I

Great flavor. I used on an 9 x 13 apple cake and it was perfect for that. But, I think it's more of an icing than frosting. It gets hard very quickly and it isn't really enough to spread on an 8-9 inch layer cake as the recipe states.

Awesome Greens and Beans

Enjoyed these very much, even though I made without sausage for a side dish with pork. I did need to cook longer than the approx. 10 min. (20 min). Like witchywoman's review, I added garlic. I can't wait to try with the sausage next time!

Pork Stew in Green Salsa (Guisado de Puerco con Tomatillos)

I cut the black pepper to 2/3, because I thought it must be a mistake (that it should have said teaspoon not Tablespoon). I wish I had done 1/3 instead. Even cutting back the Jalepeno also to half, it was too spicy/peppery for my family. And, we are not big salt fans, but, this did need more than a pinch to us (So, I added about 1/2 tsp). I chose to serve it over Saffron rice with fresh chopped tomatoes, and cooked greens with canneloni beans. Next time (it was flavorful enough to try again), I will try with less pepper and cut the meat into strips instead of cubes and use as a tortilla filling. Thank you for a great recipe that I just need to adjust for my (haha.. whimpy) family.

Southwestern Grilled Chicken with Lime Butter

The rub is tasty but be aware, that it burns very easily (on a medium heat grill). So, by the time the chicken was done, it was very charred. But no matter... we don't eat the skin, so it was discarded anyway leaving a good flavor still on the chicken. Then the lime butter (we used as a dip) made for a very different and delicious dish. The only thing I would change is use only half of the cinnamon, as we thought it was too prominent.

Buttermilk Mango-Berry Crumb Cake

I wanted to use up some frozen raspberries and this was a perfect way to do so. I enjoyed the crunch of the topping, and the crumb was dense, but not too heavy. I did think it was just a little too sweet (thus the 4 star) but the others that ate it didn't seem to. Thank you Naples34102, for a very nice cake recipe, that I will make again and try with different fruits.

Fluffy Pancakes

This recipe is terrific! I couldn't use regular milk and had my doubts when DH accidently, came home with 'vanilla' soy milk. I"m not crazy about soy milk (and wasn't sure how it would taste and ... how it would work with 2 Tablespoons vinegar. But, I needed to use non-dairy, for who I was making for. The flavor turned out really terrific. So nice, that now... I will make a point to use Vanilla Soy milk, instead. Also, I made 2 flavor additions. One being adding chopped pecans. The other adding fresh blueberries. YUM! BTW, I discovered that if you brown one side and just before turning (when you get the little bubbles)THEN add any 'additions', they turned out perfectly done. I have always had trouble getting blueberry , etc. pancakes to cook all the way through. But that worked beautifully every time for me. Thank you for a delcious pancake base recipe!

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

This sounded wonderful. And maybe it was. But I couldn't tell... it was so SPICY. There are sure a lot of 5 star ratings. Maybe there are different levels of spiciness in canned Chipoltes in Adobe... kind of like salsas. We like medium-spicy, but this was waayyyy too hot for us.

Grandma Ople's Apple Pie

Semi-homemade. Sooooooooooooo much better than frozen pies. Sooooo much cheaper than bakery pies. Only thing I did different was using a regular full crust instead of a lattice one. Quick easy, and delicious!

Potato Chips

Word of warning! Made a couple of batches of these (which by the way, were excellent!) and like a couple of other reviewers, my microwave (newer GE ) overheated and smelled like rubber burning! I won't know until we get serviced , if it is usable again. :{

Sheryl's Baked Potatoes

We thought these were great as written. Slightly crispy peels and tender seasoned potato with great presentation. Next time, I will change my seasoning blend I used (McCormick Salt-Free Herb & Garlic), though. It was too garlicy (no fault of the recipe, of course) and we would have preferred not such a strong garlic taste. Timing was spot on for medium-large potatoes (all about the same size). But I agree with the reviewer who used EVOO *AND* butter, as the butter began to burn. I will watch closely if pototoes are on the larger size. Will make these often, trying various seasonings, & with the EVOO AND Butter mix. Thank you for the great recipe!
