My favorite things to cook
I've taken a couple of classes on Cast Iron Cooking, and want to explore this method more. Interested in learning to cook more with spices. Crock potting. Breads. Pies.
My cooking triumphs
*Making eight cheesecakes for friend's son's wedding rehearsal dinner. A childhood favorite of the groom's; what fun to be able to provide them at his request for his wedding! *After grandma moved into assisted living apartments, she asked if I'd bake a frozen pie when it was her turn to hostess friends for cards. I was 15, but my grandma was not going to have frozen pie! I learned to and loved cooking pies for her. I still love baking pies.
My cooking tragedies
Being volunteered to make buns for nephews wedding; I wanted them same day fresh, and they didn't rise. Good flavor, but dense. Thank heavens for grocery store bakeries!

Super Short Ribs
Loved these. Made some variations, for what I had on hand. Used roast, cut into large chunks. No chili sauce, so used small can tomato paste and Sriracha sauce, about 1/4 cup. Simmered in a frying pan on the stovetop. I used the pineapple juice, which may have made it a little more soupy, but it was wonderful! Thanks for the recipe; am going to get chili sauce and try that, but will always add Sriracha!

Texas Christmas Pickles
Only 5 stars? :) These are GREAT! I added onion slices, as I love onion. Used Nally Garlic Slices to save time, they didn't turn mushy for me. Did I say these are GREAT? Thanks for sharing the recipe KIKI810

Shrimp Scampi Bake
As recommended, used half the butter. Doubled the garlic (I do in everything). Used Honey Dijon mustard I had on hand. Butterfly'd the shrimp so more exposure to the seasonings. Made ahead and let marinate in the fridge in stainless steel bowl several hours while I prepped the rest of dinner. Put the bowl on the grill for 15 minutes with the steaks. Lots of compliments!
