My husband and I enjoy trying new recipes. He is a great help in the kitchen and we enjoy cooking/baking together. He makes cooking and baking fun. green chile chicken enchiladas, fajitas, New Mexico style red chile, lasagna, spaghetti, chicken / beef tacos, salsa My mom makes a very tasty posole with pork and red chile. She usually makes it around Christmas time and once in a while throughout the year. I have yet to make my posole as tasty as hers but am trying. Chicken Flautas, (rolled chicken tacos) Too many to mentions : )
