Argentine Meat Empanadas

This was wonderful. I didn't add the green olives and eggs because my daughter doesn't like them, but I think that the raisins made the dish. I used the puff pastry dough, but forgot to thaw it, so I baked those and then filled them. I am going to try the empanada dough one reviewer mentioned next time. Very good!

Spicy Indian Chicken and Mango Curry

This was a very easy recipe. I'm giving it a 4 because it needed a little more kick than the original recipe called for. I added more curry and salt before my family was happy with it.

Biscotti

This recipe was easy to follow and my biscotti turned out great! The only change I did was to substitute 1 tsp vanilla and 2 tsps almond for anise (I didn't have any anise) and I drizzled melted sweetened baker's chocolate on half of them. My boyfriend loves chocolate and half of the biscotti is being sent to him on his ship. My picky 11 year old gave it 2 thumbs up!

Easy Beef Stroganoff

This was delicious! I added Worcstershire (sp) sauce and garlic to the meat when I was cooking it, and the second time I made it, I added cream of mushroom soup instead of mushrooms. The first time, I used egg noodles, but the second time, I used whole grain penne pasta because my family wasn't too fond of the egg noodles.

Quick Savory Cranberry Glazed Pork Loin Roast

This was a great recipe! Even my picky 14-year old thought that the pork roast tasted great! The only thing I didn't do was add the chicken cubes as I didn't have any, but otherwise, I followed the recipe to a T. Next time, I will add a little less thyme.

Ginger Glazed Mahi Mahi

I really enjoyed this recipe. I used cider vinegar and dried ginger as I didn't have balsamic vinegar or fresh ginger. I would also double the recipe as the sauce is so good and I would like more. I served this with jasmine rice and salad. Everyone loved it!

Thai Peanut Chicken

This was a great dish! I routinely use Peanut Satay in a jar for peanut chicken and this was much better. I served it with jasmine rice and added a can of coconut milk to make more of the sauce. My entire family loved it!

Beef Tips

This was a great, easy recipe. I followed others' advice and didn't use salt, and I added red wine. My kids loved it and argued over who got the last serving. I also didn't use gravy mix, but used the sauce and made gravy from flour and milk.

Mild Cheesy Chicken Enchiladas

This was a very good recipe, especially for those who don't like spicy. We added salsa to it, and next time I make, I'll add taco seasoning to the chicken and skip the salsa. My 11 year old didn't even realize that there were onions in it due to all the cheese. I also added more sour cream than was called for to make it creamier.
