Cuban Water Bread

Personally, I'm a fan of not tweaking a recipe. The first time I tried this one, the dough refused to come together. Too much flour, not enough water. Produced an extremely hard crust and a very dense grain. The second time, much of the same. Even tried cutting out a cup of flour. Still not enough. And one tablespoon of salt is just not enough for the large quantity this recipe makes. Cuban water bread is a poor man's bread. Pretty much just flour and water. The inside should be airier (is that a word, lol) and the crust should be pale and fairly thin. I will not be making this recipe again.

Delish! I used Yukon Golds so my potatoes weren't as fluffy but I loved the texture and the taste. Was going to use onion so I didn't have to go out and buy leeks, but boy am I glad I made the extra effort, very tasty!

Chicken and Dumplings IV

Holy ! Not only was this SUPER tasty, but it was the closest to my grandmother's than I've ever found! Had to add more water to cover the chicken, so I added one chicken boullion cube to make up the difference. Also did a half water half milk mix with the flour to thicken. FANTASTIC! I wish I could pick 6 stars.

Shepherd's Pie VI

Excellent, made plenty. The two of us had left overs for days. Loved the addition of the mashed carrots instead of diced. Added some frozen sweet peas to the ground beef. Very good.

Seared Ahi Tuna Steaks

Could only find yellow fin tuna at the time. Seasoning was excellent. Also coated in sesame seeds. Two minutes per side gave us about a medium doneness. Tasty.

Renaissance Stuffed Mushrooms

I made these for the first night my parents were over for dinner after I moved in with the boyfriend. Glad it made a good impression! They've been begging for more ever since! Much better if cream cheese is at room temp and I found that it makes a lot more mix than what you need... Easy correction? Make more mushrooms! Yum!

Oatmeal Raisin Cookies IV

The best oatmeal cookies ever. Got mixed reviews from others. Some say perfect, some say too sweet. Just taste preference I guess. Only tip I have is to let the butter get soft naturally. If you must microwave, then only till it just starts to melt, then whip it before you add your sugar.

Aunt Blanche's Blueberry Muffins

Came out of the pan easy. Did not over mix, but still came out a bit tough for my taste. My boyfriend (my official taste tester) loved them though. I added a slightly sweet cinnamon crumb topping and some extra blueberries for a little more "umph!".

Easy Sugar Cookies

A great, basic sugar cookie. You MUST start with soft butter. This should be a given for just about any cookie recipe though. I pressed the balled cookie dough just slightly, then pressed them lightly in table sugar. Wonderful!

To Die For Blueberry Muffins

Taste would be a 5, but the tops did not come out as a "crumb" topping. Just a thin, crispy cinnamon top. And for those that are having problems getting them out of the muffin pan, after cooling in the pan for a couple minutes, lay a tea towel on top of them, then flip the pan. Letting them cool upside down prevents a soggy bottom... and no one likes a soggy bottom!

Chocolate Chocolate Chip Cookies I

Fantasic! Not having nuts on hand I swapped them for white chocolate chips and they were great! Still beautifully soft and chewy days later. I'm making these again for New Years!
