Marshmallow Fondant

Reviewed: Oct. 5, 2009
I followed the recipe exactly and it turned out great! I've made several batches since and each one has been wonderful. I did not have problems rolling the fondant out at all, just used extra sugar or butter when necessary! This is my go-to recipe for fondant from now on - it even tastes yummy! Thank you!!

I make this frequently and it's delicious every time. I double the amount of noodles (personal preference) and add a bit of garlic. Perfection on a cold winter night!

Absolutely fantastic! This is my pizza crust from now on. I added some Italian seasoning and garlic powder to the dough and sprinkled the pizza stone with cornmeal before baking. Who needs delivery??

I halved the recipe and poured into an 8-inch baking dish. As per other reviewers I used half butter and half brown sugar. I also increased the cinnamon a bit (personal preference). Everyone absolutely loved these. Moist and delicious!

Asian-Glazed 'Melt-in-Your-Mouth' Pork Tenderloin

I'm only rating the sauce; I didn't have time for the brine. The flavors of the sauce are wonderful and when grilled make a delicious crust! We will absolutely make again and I'd like to try the brine next time.

Mini Cheesecakes I

I used a homemade graham cracker crust, but left the filling ingredients the same. I made several variations (cookies & cream, turtle, cherry) and all turned out yummy! Thanks for a very customizable, basic recipe!

BBQ Chicken Pizza

The only change I made was to add some fresh garlic and Italian seasoning. I made it on my lunch break and left it for my husband's dinner. He raved! And when I got a piece of the leftovers I raved too! Absolutely delicious and so easy!!

Cheesy Ham and Hash Brown Casserole

Reviewed: Jun. 2, 2009
I'd never used cream of potato soup and was a little hesitant to do so, but this dish turned out so yummy I'm glad I did! I added some chopped onion, garlic, paprika, pepper, and cayenne (we like things with spice in our house!) Otherwise I followed the recipe exactly and it turned out perfect! Thanks for a great recipe!

Banana Bread Cookies

I used three bananas, added some nutmeg and cinnamon and used half white, half brown sugar. These were so yummy!! A little banana bread snack! I didn't use the icing; didn't think they needed it.

Perfect Berry Shortcakes

Reviewed: Jun. 2, 2009
I didn't try the butter method, but LOVED these shortcakes! The dough was super easy, baked up beautifully and tasted even better. Definitely use the sugar on top - it's not overpowering (as I thought it might be). This is my go-to recipe for shortcakes from now on! Thanks!

Bacon and Tomato Cups

I used diced Italian-style tomatoes, some garlic and substituted mozzarella for the swiss. I also baked them in a regular muffin pan. They were absolutely delicious and got rave reviews from all! I will definitely make them again!

Strawberry Chocolate Mousse Cake

Reviewed: Jun. 2, 2009
I've made this cake twice now, both times using a brownie crust. The first time I substituted milk chocolate chips. The second time I used the semi sweet. Both cakes were equally delicious! This cake is easy and impressive. But, due to the short shelf life of strawberries should definitely be enjoyed in a day or two for best quality.

Creamy Dill Cucumber Toasties

Reviewed: Mar. 23, 2009
As suggested by other reviewers, I only used half the packet of dressing mix, and used half mayo, half sour cream. I also mixed the dill right into the mixture. I toasted the french bread before assembling and had no problem with sogginess. Absolutely a five star recipe with these changes!

Aunt Teen's Creamy Chocolate Fudge

Clone of a Cinnabon

Reviewed: Mar. 18, 2009
First time making cinnamon rolls from scratch! I don't have a bread machine, so I dissolved one packet yeast in one cup warm milk and added 1/4 cup sugar. I let that mixture sit for 10 minutes to activate the yeast and then added the eggs, salt, the rest of the sugar, a bit of vanilla (personal preference), and 2 cups of the flour and mixed well. Then I added the other 2 1/2 cups of flour and kneaded until the dough pulled away from the bowl. I set in a greased bowl, covered with a towel in an oven that had been preheated to 250 degrees and then turned off, and let the dough rise for one hour. Then I proceeded with the rolling out portion of the recipe. I made 78 rolls for my husband's co-workers and got rave reviews! On two pans of rolls I combined 1 cup brown sugar, 1/2 cup butter, and 2 T. corn syrup in a pan over medium heat until melted. I removed from heat and stirred in 1 tsp. vanilla. I divided the mixture between the two pans and spread evenly in the bottom before putting in the rolls. Presto - caramel rolls! No need to frost!

Artichoke Chicken

Reviewed: Mar. 6, 2009
After reading reviews, I used 1/2 mayo, 1/2 sour cream. I also finely chopped onion and added that and some crushed garlic to the mix. Another reviewer suggested breading the chicken first, so I tried that as well. I pounded my chicken breasts flat, dredged in a flour, salt, pepper mixture, then dipped in a beaten egg, followed by a panko bread crumb, grated Parmesan mixture. I allowed the breading to sit on the chicken for about 20 minutes in the fridge before I fried in 2 T. of olive oil on the stove top until crispy. Then I topped with the artichoke mixture, and a bit more grated Parmesan and baked at 350 degrees for 25 minutes. Yum!
