Whole Wheat Ravioli with Sauteed Garlic Vegetables

Delicious! I used a 22 oz package of ravioli instead of 9 oz. and reheated the leftovers the next night, it reheated well. The green beans were better the 2nd night because they softened up some more. We will definitely make this again.

Red Potato Bites

These turned out great! It was a little bit of a pain scooping out the insides, but once I did a few I got the hang of it. I used pre-cooked bacon bits rather than cooking bacon. I boiled the potatos longer than ten minutes, maybe more like 14 minutes, but they still could've gone a bit longer. I made about 20 of them and baked half on new year's eve, and put the rest in the fridge to bake the next day. They came out yummy both times.

This was really good, I omitted the pine nuts and added some artichokes. It was just as good reheated the next day. Will definitely make again!

Addictive Sweet Potato Burritos

My husband and I both liked this. I think that next time I might mix the potatoes with the bean mixture, that way you don't just get a mouthful of potatoes when you bite into it. I halved everything to make six burritos instead of twelve, but could have used a little more spice. But yummy overall, will make again!

Carrie's Artichoke and Sun-dried Tomato Pasta

This turned out very good, my husband really liked it. Before I made it he said he didn't like sun dried tomatoes, but he ended up cleaning his plate. It is definitely very tasty and different and I found it a good way to use my leftover white wine from the weekend :)

Grandma's Slow Cooker Vegetarian Chili

I just made this tonight and it was delicious. I used black beans instead of the black bean soup (since I couldn't find any). I put it in the slow cooker for 2 hours like the recipe said, but the onions and peppers were still crunchy so I'm letting the rest of it cook for a few more hours so that the leftovers will be softer. Otherwise it was great. My husband is a picky eater, especially in regard to beef and chicken, so he loved the beans and the fact that it was vegetarian. I will definitely make this again!
