We all loved this recipe. I usually get fresh chicken because my parents raise there own, and broil the whole chicken, then I let it cool and shred the whole thing. Usually I am making homeade chicken noodle soup and use some of it and then freeze the rest. This is when i use more of it, in this recipe. Works great. While I am boiling it, I add seasoning so the chicken is already seasoned. All I have to do is defrost a bag and add it to the recipe. Mom of four..always looking for shortcuts!

Best Tuna Melt (New Jersey Diner Style)

If I could give this more stars I probably would. Everyone loved them..my kids don't like swiss or rye bread and they loved them. I added pepper, seasoning salt and onion to the tuna! Very tasty!

Enchiladas

Everyone loved them...I added to the taco seasoned meat, green chilies from the can, onion and fresh chopped tomatoes. Do use part of the enchilada sauce to coat the bottom of the pan, just don't use too much, mine started to get a little soggy! I did put a little bit of extra cheese in the meat mix and a little extra on top. Topped with sour cream, can't beat it.

Hearty Garlic Potato Soup

My husband and I give it a 5. My kids more like 3.5??? Don't know why they like everything. I might not make it so thick next time, but with bread & butter it's great!

Roasted Red Pepper Chicken

Everyone loved this except my hubby that doesn't care for "dry" cheese like Feta. Even my kids enjoyed it. The sauce seemed a little runny. Extra sauce is good...We really liked it!

Mouth-Watering Stuffed Mushrooms

Don't be afraid to "overstuff" them, I thought it would run, but it really didn't. I also didn't wait until the topping was browning and I wish I would have. Still awesome if you like cream cheese & garlic. I did put them directly on a plate with paper towels to soak up any moisture. Will definatly make again. Yummy!

White Russian

I adore a good White Russian..I like it with milk instead of cream and a splash (literally a splash) of Coke on top...makes it taste like chocolate milk. Awesome!
