Mini Meatloaves
THESE ARE AWESOME! VERY TASTY. I ALSO LET THE OATS AND MILK SOAK BEFORE ADDING THE GROUND BEEF. I TRIPLE THE BATCH AND FREEZE THE LEFT OVERS. I SPRAY A PIECE OF FOIL WITH NON STICK SPRAY AND WRAP EACH ONE INDIVIDUALLY FOR LUNCHES. I SPRAY THEM TO KEEP THE TOPPING FROM STICKING. TRIPLING THE BATCH DOES GIVE YOU 24 MINI MEAT LOAVES OR GIANT MEATBALLS, DEPENDS ON YOUR PERSPECTIVE!!!

Streusel Coffee Cake
This was great!! I did cook it longer than stated but it was fine. A lot of reviews had trouble with overflow but i baked in a Pampered Chef stoneware bundt and didn't have trouble. It did up over the center but still not a problem. I also had no trouble with the cake popping out. I sprayed bundt with Bakers Joy. Next time I will double the "streussel" topping and add more to the middle and then mix butter with sugar/cinn. mixture for the topping, (which of course is actually the top!!!) This was easy to make and was very tastey! I will make again adding different things like apples or different nut combos or chocolate chip. Raspberries and chocolate sound good! Hmmmmm.......... gotta go bake!

Tara's Sweet and Chunky Chicken Salad
This is awesome!! I just made it after breakfast so we can have it for lunch. The cranberries make it sweet enough for my kids to like. I also like how versatile (sp?)(I cook better than I spell!) it is. I also used b/s chicken breast and sub'ed sliced almonds for the sunflower seeds. It's just what I had. I will be making this over and over trying new nut and veggie combos; celery, walnuts, grapes. The cranberries and pickles will be a must me for me though!!! GREAT RECIPE!
