Mother of two lovelies. I actually taught myself how to cook from the internet and cookin television about 8 years ago and have met with phenomenal success. Before the age of 23 I couldn't burn water! Cooking relaxes me and allows me to express my creativity and love through one of the best sensory experiences one could hope for - taste! There is nothing better in the world than a bottle of local Pinot, music and spending a couple hours in the kitchen unwinding.

Wasabi Mayo Salmon
I know it totally defeats the purpose of "wasabi" mayo salmon to replace the wasabi...buuuut.. I wanted a spicy new recipe for salmon and only had Sriracha ( another hot chili sauce ) on hand. So I substituted the wasabi with the Sriracha and oh my goodness! It was amazing. I also only used half the mayo because a whole cup seemed a bit much. I also used asain style rice crackers ( again all I had on hand ) instead of chips. It turned out awesome! My daughter was a hugely against this combo but after the first bite she asked when we were having this again. Soon!

Shrimp Jambalaya
This is another take on one of my favorite ways to prepare Jambalaya. I double the garlic and use only half of a medium sized red onion. There are plenty of veggies in here and too much onion in my opinion kind of kills out the other flavors. I also omitted the peas ( not a fan when they are mixed with spicy veggies ) and instead use one whole green and red pepper. Instead of Creole seasoning I add 1-2 minced jalapeno peppers but for extra spice ( especially with sensitive little palates ) be sure to have some extra hot sauce around. I also found that in order for the rice to be fully cooked, simmering time is a lot closer to 40 minutes than 20. This recipe is so easy, tasty and gentle on the pocket book that it easily gets 5 stars! Pair it with some fresh flaky buttermilk biscuits and ..mmm.. heaven!

Roasted Potatoes with Greens
I LOVE this recipe! I did what others suggested and cooked the potato's with the butter/rosemary/garlic mix first on the stove for about ten minutes before transferring them to the oven. However I did cut the butter by a third and added three times as much garlic. With the added bit of olive oil at the end there is more than enough butter even with the cuts for my taste. It also helps if you like your potato's a little crispier like I do. This recipe is do delicious, easy to make and the presentation is A+! This is a 10star recipe in my opinion!
