Amazingly Easy Irish Soda Bread

I used half whole wheat and half all-purpose flour. It was good, but not great. A bit dry and crumbly and a little too sweet for our tastes.

Irish Bacon And Cabbage Soup

This is fabulous. The only thing I did differently besides doubling the recipe was to saute some green onions, a small leek and a few garlic cloves in the pan before I added the other ingredients. I browned the bacon in a large skillet as I find it is easier to drain that way. I will definitely make this again.

This came out beautifully. I used more garlic cloves because we love garlic with pepper and poured the Worcestershire sauce over the top.

Pumpkin Chocolate Chip Muffins

I doubled, used applesauce and increased the spices and added ground ginger and still found this recipe average. For pumpkin bread I found the Pumpkin Bread IV recipe on this site far superior.

This was wonderful. I pre-baked the crust for 12 minutes (will do 15 next time) and halved the tomatoes. Can wait to try it again.

Cabbage Beef Soup

So easy and really good. I used one can crushed tomatoes (just like sauce) and one can diced tomatoes because that is what was in the pantry. I cut back slightly on the cumin and used a little less bouillon - I use Better Than Bouillon because it is easier to control - to make sure it was not too salty.

Glazed Meatloaf II

This was very good, but even after cutting back on the sugar and adding some dijon mustard it was a little sweet. I was out of horseradish as I think that would be just what I would like. The texture was terrific. I will make it again with a little more bite.

Parmesan-Black Pepper Arborio Rice Pilaf

Creamy and delicious. I only added 1/4 cup of the cheese and we added pepper to taste on our plates. I also added fresh baby shitake mushrooms and two cloves of garlic.

Alaska Salmon Bake with Pecan Crunch Coating

This was delicious. the texture was perfect. After reading other reviews I added some wasabi (I was out of horseradish). Next time I will add a heaping tbls of horseradish because we like a little bite. This is a keeper.

Apricot Brisket

We buy local, grass-fed beef in bulk so we only have 1-3 briskets a year. We love Apricot Brisket and look forward to it every time. It is wonderful and one of the easiest recipes ever. The only thing I changed is I quarter the apricots.

Corn Bread Loaf

I tried three different cornbread recipes - the non-sweet kind - and this one was the best. Just a hint of sweetness and great texture. I followed the recipe exactly except I used an 8" square glass baking dish and I used vegan shortening (no trans fat).

DB's Seven Pepper Chili

This was a great chili recipe. I buy locally and lucked into the last of pepper season. I could not match all of the varieties so I made sure that I matched the quantity. Usually chili really improves the second day but this was terrific immediately.
