This is a great recipe! I am always looking for healthy recipes to try, and this is the first granola bar recipe that I have been truly happy with. It's so easy to midify! They are a little sweet for me, however. I've made these twice, and the second time was my favorite so far: I substituted applesauce for half the oil, used 5-grain hot cereal for the oatmeal, whole wheat flour for all purpose, cornmeal for the wheat germ (didn't have any), added only about a third of the sugar called for, and used only 1 tsp of vanilla. I found that the first time I made them, the vanilla came through a little too strong, but that could have been because I used all applesauce in place of oil and didn't add the brown sugar. I also found that when using applesauce, if you like a crispier bar like I do, it's best to bake it for 5-10 minutes more than the recipe says. Overall, though, this recipe is awesome, exactly what I was looking for! Thanks!
