Blueberry Basil Granita

it has a an interesting taste. if it's not eaten within a few hours it freezes solid. the best way to eating it, is over vanilla ice cream...or maybe with some sort of cake.

My Favorite Falafel

came out great! used cayenne pepper instead of hot red pepper and i added coriander. the texture was a little soft. i might smash half the chickpeas by hand next time and mix it with the fully processed mixture.

quick and easy recipe. following the advice of others, i cut down the amount of onions by about half and i think it was definitely an improvement. i also added a little but of fresh cilantro [for color] and a little bit of feta on top [instead of salt]. will definitely make this again!

Spinach and Feta Turkey Burgers

these were a huge hit...definitely didn't need a bun or condiments! i had some fresh spinach so i cooked that instead of using the frozen kind and i added some onions for a little extra flavor. the burgers were a "drippy" so a baked them in the oven first for about 10 minutes on 400 to keep them from falling apart on the grill. i will definitely make these again!

Broccoli Soup II

this was quick to make and turned out pretty yummy.i pretty much followed the recipe exactly except i added about 3 tbsp of parmesan cheese. the soup ended up being a little too thick so i added about a cup of milk while it was still in the food processor. i also set aside about 1/2 a cup of the cooked broccoli to add to stir in before serving.

Mediterranean Roast Vegetables

this was pretty tasty but by the time the potatoes where cooked through, the veggies where practically mush. i cut back on the oil by a 1/4 and it still ended up being too much. i'd recommend starting with half of the oil and then adding more depending on how it looks the first couple of times you go to stir it. also, i think i would rename the recipes "Mediterranean Roasted Potatoes AND Vegetables" considering the veggies actually end up constituting about 1/3 of the total dish!

Fabulous Cilantro Pesto

This came out really well though i have to say, i couldn't tell that there was cilantro in it [instead of the usual basil]. I did change it a bit. I didn't have any white wine vinegar so i used red and added a couple of squirts of lemon juice. The large [more than normal] amount of garlic made it delightfully spicy. Also, when i mixed the pesto with the pasta, i added one finely chopped tomato and 1/4 of a bell pepper and it gave the final dish a little more texture and freshness.

Baked Green Vegetables

I think the amount of bread crumbs was a little too much and probably should have been added at the end as they ended up being a bit soggy when it was all done. Also the cooking time was a little too long as the veggies ended up being a bit too mushy. I think if it cooked a little less, with a little bit more spice [of some kind], it would have been a bit more flavorful.

Tofu Masala

This came out really tasty! I used chicken broth instead of water and simmered it for 20 minutes to thicken the liquid a little more. I also ended up adding a bit of extra cumin, cinnamon, bay leaf and ginger, because i only had 1 tbsp. of garam masala. It was a big hit, very flavorful and pleasantly spicy (with a little bit of extra pepper)! Was great served over plain white rice!

this recipes was a HUGE hit. everyone was a little weirded out when i told them what i was making but they quickly changed their minds once they started eating. i did half with hebrew national and the other half with veggie dogs and they both came out delicious!

Cheesy Brat Stew for the Slow Cooker

Good idea though i have to say i strayed a bit from the recipe by adding some leftovers. i added left over rice and broccoli. i didn't feel there was enough water to cook the potatoes so i added a cup instead of a third of a cup. It came out good though 3 hours was definitely NOT long enough to cook the potatoes. Even with the extra water, it took closer to 5 hours to get them tender!

Wonderful and simple recipe. I used apple cider vinegar which i think may have made it a little bitter but the sugar cut the acidity nicely. I also added fresh cilantro and a bit of fresh dill.

Baked Spaghetti Squash with Beef and Veggies

Huge success in my house! I did substitute ground turkey for the beef and it came out really good. i was a little wary of adding so much cheese but once it came out of the oven, the flavors all mixed together perfectly. Will absolutely make this again!
