Cornucopia

I basically made a cornucopia the same way a few years ago, but using my own bread recipe. I would think it would be easier to cover the foil using your own bread recipe because you can cut longer, wider, etc. strips. It gives you a little more control. The refrigerated dough would save a lot of time though. I make vegetables out of bread to fill my cornucopia. I also used gingerbread to make leaves which looked beautiful. I dyed the egg glaze various colors to make the vegetables.

Chipotle-Citrus Marinated Chicken

The recipe only calls for 1/4 teaspoon of chipotle powder NOT 1 teaspoon--that may be the reason why ThomasG's girlfriend found it too spicy.

Easy Broccoli Quiche

I liked the idea of this recipe because the cooking time was short. Big mistake. I baked mine on 360 for 1.5 hrs! It was way to soggy in the center and seemed very unappetizing to my husband and I. I used fresh broccoli so the ice from frozen wasn't an issue. Next time I will try what another recipe suggests. Covering the crust with foil, baking it for 5 min at 450, then reducing it to 350 and bake for 5 more min. Then you add your contents and bake for 40-45 min.

No Bake Cookies III

I use basically the same recipe, but with 2 cups of oats instead of 3. I don't think there would be enough liquid to coat 3 cups of oats properly.

Baked Whole Cauliflower

Smith's was selling purple and orange cauliflower. I just could resist buying the purple! It added so much color to the meal. I brushed melted butter on, then sprinkled the remaining ingredients (which I had mixed together in a bowl) to coat the top. I baked it without a lid on. That way you don't have soggy cauliflower and the top will brown nicely.

Black Bottom Cupcakes I

These were great! They really don't need any frosting, but may be fun to experiment with-like adding a glaze or something? They were a big hit at a joint birthday family party.

Caramelized Baked Chicken

Very good. I do not eat meat, but my husband loved this recipe. I poured the sauce over brown rice-and wanted it to be a little on the runny side like other people have complained about. I served with broccoli steamed with a lemon-butter sauce and toasted almonds.

Smucker's® Oatmeal Carmelitas

These are delicious! I don't like nuts in desserts so I left those out. Coconut would also taste yummy in the filling, and I may try mixing some sweetened condensed milk in with the caramel, as well as another recipe suggested. I will definitely make these often in the future!

Oatmeal Chocolate Chip Cookies III

These did turn out pretty fluffy like a normal cookie, but I think they tasted a little more bland, not sweet enough to be called a dessert. I only baked one batch yesterday when I made the dough and will add more white sugar before I bake the next. It would probably be better to add equal parts brown & white sugars. The nice thing about this recipe, is that you can eat the dough without the fear of getting salmonella, however, I still prefer the recipes WITH egg.
