Roasted Beets 'n' Sweets

This was very good. Even my husband had seconds. I was in a hurry and mixed it all together and threw it in the oven before I realized you are supposed to cook the beets first. It was OK becuase I chopped them small. Next time I will do the beets AND the onions first as I like the onions really browned. A minute under the broiler at the end of cooking would be good. I made this last night and am looking forward to the leftovers that are reheating right now.

Easy Turkey Tetrazzini

This was pretty good - I liked it, picky kids fussed. It was a little dry though so I would increase the sauce next time. I substituted french fried onions on top instead of parmeasan cheese and used homemade yougurt from this site instead of sour cream. That gave it a nice tang which, combined with the onions was a good flavor.

Homemade Yogurt

Yay! This was soooo easy and delicious. I made it in a large glass mixing bowl and put it in my electric oven overnight with just the light on. If it isn't thick enough in the morning I set the oven for 100 and leave it for a couple hours. Delicious! I was intimidated to try making yogurt and thought you had to have the yogurt machine. Now I will now be making it at least twice a week without the added nuisance of a machine taking up space. My son can eat 2-3 small containers a day (and he's only 6 1/2), and he loves this so it is going to save us a lot of money.

Fish Tacos

The stars are for the beer batter fried fish which was really good - the kids ate it up - and would be a good mix for fish and chips. For that alone I would have given 4-5 stars. I did not like the sauce, however. It was too tangy with yogurt AND lime. I can see how sour cream might have been better. I will be making the fish again - as it is way cheaper than the frozen beer battered fish. I used tilapia because I had frozen fillets on hand.

Butter Frosting

Yum. The first time I made this I followed the recipe exactly and it was great. This time I was in a hurry so I read the ingredients, threw it all in a bowl and beat it - still turned out perfectly, even though I didn't follow the instructions. Kids are enjoying the beaters right now!

Orange-Glazed Asparagus

This was really good. Even my daughter, who whined heartily about having to eat at least one piece raised her eyebrows and said "Mmmm" and ate more. My husband prefers another method I usually use, but said it was a nice change.

Caramel Apple Pork Chops

This was YUMMY. My only complaint is that the apples and sauce need to be at least doubled - the kids went crazy for them. My husband, who is not a pork chop fan ate it all.

These were pretty good. I put all of the ingredients in my food processor - it worked great to make a dough - very easy. I think this would have been very difficult by hand.

Corn Dog Muffins

Yum AND Fun! I used Jiffy cornbread mix which is already pretty sweet so the sugar wasn't necessary. Kids and hubby loved it. I can't wait to make more and put it in their lunches for school. (Warm it up and put it in a little thermous). Great party or playdate food. Thank you. I only wish my Dad, who loved corn-dogs, was still alive to try it.

Oatmeal Peanut Butter Bars

Uh Oh, too yummy! I substituted honey for the syrup and used pecans instead of seeds because that is what I had. I will add wheat germ and a little salt next time. I used a natural peanut butter without salt and I think it could use just a touch. Hmm, maybe not - pretty darn good. . . A good home-made snack for my kids' lunches - and my New Year's resolution of dropping the packaged foods.

Refried Beans Without the Refry

I really like these beans, 5 stars. My husband gives them 3.5-4 stars. I left out the jalepeno to make them kid friendly, but that would probably increase the rating for him. The second time I made them I forgot to drain the liquid off before mashing and they're a little soupy but still quite good. I just refried them a little longer. I am thrilled to find out home-made refried beans can be so yummy and healthy and cheep and easy! Thanks for the recipe!

Winter Energy Cookies

My kids love these and I'm glad to have a healthy cookie for their lunch snack. I followed the recipe exactly and made cookies. I also tried them in mini-muffin cups to simulate "Aussie bites", a treat we buy at Costco. These are just as good and way cheaper. Next time I will probably decrease the brown sugar as they are quite sweet.

Easy Polenta with Tomato Sauce

I LOVE this stuff! I was out of milk so I used a can of evaporated milk and added water to make 2 cups. I will probably use a little less cheese next time just to cut the fat a little. I had to come write this just to stop myself from eating it. My 5 1/2 year old son likes it enough that he will be having it in a thermous for lunch at school tomorrow. I love leftovers!

Grandma Johnson's Scones

I was craving some kind of comfort food and boy was this good. I did not have sour cream, but did have some vanilla yogurt and used that instead, decreasing the sugar to 2/3 cup. I forgot the raisins and added an orange glaze. Mmmm good! Had I known how EASY scones were, I would have started making them years ago. I will definitely make these again. Thank you, Rob for the recipe!

Classic Gingerbread Cutouts

This was my first attempt at making my own gingerbread house from scratch. I doubled the spices and it was delicious. I made it pretty thick and cooked it almost twice as long (it was almost 1/2" thick when done) so it wouldn't be too soft. The royal frosting was perfect. All my worries about how it would set up were for naught -the house stood perfectly with just the frosting and set-up nicely. Using the icing in a zip-lock bag with the corner cut was a breeze - so much fun! My 5 and 7-year-old and 5-year-old friend had a blast putting candy all over it and have since had more fun eating it. I can hardly wait until next year to make it again! (I also can't wait to get over this cold so I can taste again - this was really yummy!)

Great-Aunt Nina's Noodles and Chicken

This was great - my 5-year old had fun helping with the noodles and we enjoyed their hearty, almost dumpling-like size. I used half whole-wheat flour for the noodles. If I make it again I will probably leave out the wine as it didn't seem to add much (cheep,old wine in the fridge could have been the problem). Also, I used breasts and thighs I had on hand but can't wait to make another batch with a whole chicken. Very hearty and good. I added enough water to make it a soup.

White Bean Pesto Dip with Pita Chips

I used a different brand pesto that I had on hand (sorry Buitoni) and I substituted black beans - again what I had on hand. I can see how white beans may have been a little creamier and the color would have been better. Still, it was pretty good.

Cornbread Casserole

This is one of my kids' favorite dishes (5 and 7 yrs old). I was out of cheese once when I made it and it didn't make much difference so I usually omit it. I also frequently use non-fat yogurt instead of sour cream. These two changes remove a lot of the fat. The yogurt adds a little extra tang. I use the Jiffy cornbread mix which adds just enough sweetness. The other mixes leave it a little bland. Try adding diced green chilis. Yum!

Broccoli Chicken Casserole IV

This was pretty good. I used left-over chicken and pork and fresh broccoli so it wasn't too watery, but I can see how it would be. I used mild cheddar cheese as that is all I had and I put stuffing mix on top with some cheese which was good, and a little garlic powder as well. It was easy to make but I find the soups a bit too salty. I served it over left-over rice. This was a good way to use up left-over meat.

Meatloaf California

Mmmmm, I just finished off the leftovers for lunch. Very good, even my picky daughter liked it. I thought my son would love it but he was upset by the veggies showing so I will chop them smaller in the food processor next time. I also only had one egg and doubled the recipe but loved it even though it fell apart! I did cut the sugar in half and used half yellow mustard instead of all brown just for kid appeal. Thanks!
